Happy Hump Day all! I hope you all had a great long weekend and happy back to school =)
I had a wonderful long weekend and will tell you all about it in an upcoming post (probably next Monday). Here is a hint of where I went:
It was my first time and it was rather super fantastic. It will be a fun post to tell you all about it =) In the meantime, here are some of the eats I enjoyed over the weekend. I of course forgot to take pictures of the vast majority of them… but I remembered to snag a few.
Our trip started off with a stop to Babycakes in Los Angeles. I had heard about it about a year and a half ago and have been really wanting to go. LA is kind of far to make a cupcake trip though (or so my husband tells me…), so I had to wait, but finally got a chance this weekend since we were in the area.
My hubby was lucky enough that they had treats made without garbanzo bean flour (he is currently on a restrictive diet) and tried a mocha cupcake:
And I tried a good old plain chocolate cupcake:
I am thoroughly impressed with the texture. It did not make me feel like I was eating a vegan and gluten-free cupcake. It was moist and held together really well (no crumbles!). And the icing… oh the icing – pure heaven. I somehow managed to only eat one despite the fact that I don’t know when I will get another. We all really liked them and were pleased as punch to enjoy these as an afternoon snack.
I thought supper might be tricky as I’m vegan and gluten-free (although my friend is vegan and her hubby is open about it) and Terry is currently having to avoid so many things, but we settled on Soupplantation (similar to Sweet Tomatoes in the Bay Area) and found we were all able to eat. It’s a big salad bar with soup options and a few other hot items. I love salad bars!
I had packed a lot of snacks for the trip, so we didn’t need to eat out for every meal, and I was worried about eating at the actual park, but that turned out to be unfounded. I found a place that served tasty vegan options. I did have a bit of gluten, but it must have been minimal as I felt fine the following day. I forgot to take a picture of lunch, but check out my awesome afternoon snack:
This Pineapple Whip was safe for me and my hubby. The ingredients were extremely scary sounding (modified this and sugar that), but we tried not to stress about it too much and it was over 90 degrees and a very nice way to cool down.
We ate at a Native Foods (my favourite Southern California restaurant!!) and the lunch I had was SO GOOD. But I forgot to take pictures
So I snapped a few pictures of supper from when we got back. Despite having limited food in the fridge, I managed to be creative by whipping up a potato hash and a veggie & kale sautée.
And I managed to make a strawberry & rhubarb dessert =)
