This day of food recording is not particularly good in that I forgot to take pictures of like half of my food. BUT, I made a particularly yummy salad and I look forward to sharing the recipe with all of you.
I had a good leg workout after and had a mini orange (can’t remember what kind – looks deceivingly like a satsuma but isn’t and doesn’t taste nearly as good) with a few almonds, which I forgot to take a picture of.
Lunch was quite good. I had gone to a restaurant with a friend last month and it was a non-veg restaurant and they only veg-friendly thing was salad. I like salad so I didn’t mind the lack of options. But I was pleasantly surprised with how tasty it was. It was quite simple, yet delicious and filling. So I recreated it for lunch today. I may have added a bit of Kimmy-flare.

Dinner was amazeballs! I had in mind to make a chickpea coconut curry dish and just randomly threw things together and it was really good! I shall post the recipe later this week. It was one of those moments where I just kind of threw everything together and didn’t really measure it out… go figure. Ah well, I think I can figure it out.

It started yesterday, but I ended up not really starting yesterday. I had a bad run in with some emotional eating, I am picking myself up and dusting myself off and trying again today. This is a rough time of year for me. Friday is my dad’s birthday… well it would be if he were still alive. You’d think after 8 years it wouldn’t still affect me so much, but I guess it does. It also doesn’t help that next month will be the 8 year anniversary of his passing. I’m trying to keep busy, but I think it’s harder this year as it is my first year having moved away and I think I’m still dealing with the stress of not being able to work. My eating habits have become just atrocious over the past several months. I would really like to correct this, I’m hoping the challenge helps me. I will post my personal goals later this week.
Anyway, here is the salad recipe =)
Apple Avo Cranberry Walnut Salad
1 large serving of mixed lettuce
1/2 of a small avocado, diced
1 small apple, cored and cut into chunks
2 tbsp of dried cranberries (juice sweetened if you can find them – or even better, unsweetened)
2 tbsp of chopped walnuts
2 tbsp of soaked & dehydrated buckwheat groats (optional – I know not everyone has these lying around, sprouts would be a nice replacement)
For the dressing I just combined 1 tbsp of olive oil, 1 tbsp of balsamic vinegar, some fresh squeezed lime juice & a bit of salt & pepper. So simple to throw together before heading out.
