This is my third edition of What I Ate Wednesday. I took a picture of my breakfast yesterday morning but then forgot to take pictures the whole rest of the day. Ah well, that just means that this edition of WIAW is actually for food I ate today =)
Breakfast was waiting for me when I woke up this morning as I had prepared it last night before going to bed. I had fun taking the picture:
I had a couple of teeny bite-size cookies & raw brownies as a morning snack – I know, a little early for treats. But it was a cookie potluck today at the library where I volunteer.
For lunch I had pineapple “fried” rice:
Not the best pic, but by the time I got home from the library, I was quite hungry. This was leftovers from a potluck I went to last night for my book club. Someone had cut the side of a pineapple open, took out the pineapple and cut it into little pieces to mix into this rice dish and then put it back in the pineapple. It looked so cool! I wish I would have taken a picture. I will have to reproduce it.
I had some veggies and hummus for a snack and check out this yumtastic dinner:
This is actually Terry’s (my husband) plate. I don’t drink alcohol, but thought it looked fun to include in the picture. I made a scramble which was inspired by my good friend Sarina of Earthgiven Kitchen. When I told her I try to avoid soy as it affects my hormone replacement therapy, she set out to make a Kim-friendly scramble. You can find her recipe here: http://earthgivenkitchen.com/2012/09/06/vegan-brunch-savory-scrambles-and-sweet-parfaits/ I used white beans and potato, onion, garlic, mushrooms, zucchini, yellow & orange pepper. I used coconut aminos in place of soy sauce and added a pinch of cayenne. I had meant to serve a side of steamed chard (as I found a beautiful bunch at the market Saturday), but forgot. Oh well, that means it will be around tomorrow.
And we are currently watching the movie Elf to get into the holiday spirit and snacking on some air popped popcorn with a touch of coconut oil and a sprinkle of sea salt.
So far in the past week we have watched Home Alone 1 & 2, How the Grinch Stole Christmas and now Elf. I have the Santa Clause 2 and hope to get the first from the library tomorrow. Are you guys getting your fill of holiday flicks?
