This is my second edition of What I ate Wednesday =) And I ate some pretty fun things yesterday.
Let’s start with one of my favourite breakfasts!
I triple love this breakfast!!! I adapted it from http://ohsheglows.com/recipage/?recipe_id=6001781. So I usually just take about 1/3 cup of gluten free oats, chop up some nuts (this one has almonds, pecans, cashews & walnuts – but I just use whatever I have on hand, about 1 handful total), I mix the oats with the nuts and add a few shakes of cinnamon, a pinch of sea salt, 1 tsp of maple syrup and add some fresh chopped berries on top. But every once in awhile, I make an extra special treat and have this on top of a coconut yogurt. YUM. I was sad after I went gluten-free that I could not find any cereal that wasn’t full of refined sugars, so I make my own.
This actually held me over until lunch, but I was kind of hungry so I had a salad and a couple of snacks.
The salad is my favourite salad (wow… I have a lot of favourite foods!). It’s just some kale massaged with a bit of olive oil and some lemon juice & a sprinkle of sea salt topped with chopped bell pepper and sunflower or pumpkin seeds. And as raw kale is not super thyroid-health friendly, I had some nori snacks to try and balance things out.
I had an avocado that needed to be used up so I chopped some veggies and had some guaccamole:
I love cucumber, I could eat it everyday, all day long. The veggies were gone before the guac was, so I had a small handful of Beanitos.
Have you ever had these chips? They are a great “corn chip” substitute. They are gluten-free, corn-free, soy-free, non-gmo & vegan. They pretty much rock. I was able to easily find them when I was living in Canada, but was super disappointed when I moved here and couldn’t find them. I have since found them at a couple of stores, but both are 45 minutes away.
Roasted yam, lightly steamed broccoli with some fresh-squeezed lemon & dulse flakes & spiralized zucchini noodles with homemade pesto, tomato, white beans, parsley, cherry tomatoes & pumpkin seeds.

So I made a Whole Foods run today and was hoping to not buy myself a treat like I’ve been in the habit of doing. That idea failed as I saw some raw cacao macaroons. They were pretty healthy, but I’m just having a hard time getting out of the habit of eating sweets so regularly. I don’t normally eat so much “junk” food and I’m trying to get back to less dates and more fresh fruit and less “treats” and more veggies. But it’s a process. And I’ve had several people remind me lately that my idea of “junk” food is a lot different than the average, and especially different than what I used to eat. I shouldn’t be so hard on myself and just keep trying =)
