This week is going by in a blur! And yet I woke up this morning thinking it was a day later than it actually was and had to revise my entire to-do list ;p

I started the morning off with a greens smoothie. So far the challenge is going well. I mentioned in my last WIAW post that I’m doing a smoothie challenge to have a green smoothie every morning for breakfast for the month of February and nothing else to eat before noon aside from fruit. I have to admit… I caved a couple of times last week though. Friday morning for some reason, I needed a handful of corn chips. I don’t even eat corn chips normally, I’m not a fan. But I couldn’t shake the salty craving, I must have been deficient in something. And then Saturday, I was just feeling super tired and lethargic and very cold, so I treated myself to a bowl of millet porridge. But otherwise I quite love my morning smoothie.

This was a kale, raspberry, pear smoothie with fresh, homemade hemp mylk.

After a good arms workout, I had a snack (it looks bigger than it actually was):

And the chickpea salad I had for lunch really hit the spot. I’ve been getting back in the habit of making a big salad on Sundays and putting them in lunch-sized containers so they are ready for me during the week. Sometimes I’m on the run, or just plain don’t feel like making a salad, so this is a great time saver.

Having a rice cake with nutbutter is probably my all time favourite snack. Yum.

And for dinner, I made Angela from OhSheGlow’s Goddess Bowl (with extra kale!):

I added a generous handful of sprouts as I had bought a big bag from the Farmer’s Market Sunday.

And for dessert, I made almond cookies. I totally forgot to take a picture until I was halfway through:

I actually had left over almond pulp from making nutmylk last week and have been wanting to make cookies out of it. I halved the recipe to avoid leftovers. The texture didn’t turn out at all… but I’m sure if you followed the recipe it would have ;p I think almond meal holds together better than almond pulp. And I had to omit flax meal as I only had seeds and have yet to buy a grinder for them (any suggestions on this would be greatly appreciated!!!). I also only used about a tbsp of maple syrup, oh and instead of chocolate chips, I put in some dried lavender. Texture aside, they tasted heavenly.

  1. If you get a vitamix, they have a package that comes with an additional container that’s meant for dry goods/grinding. You can also buy it separately as an add on later.


  2. Oh cool! Thanks Brie, I think I’m leaning towards a Vitamix. Terry said it could be my birthday present… but it may have to be early as that is several months off still and my blender is starting to go :(
    Haha, yep, I wrote it Tuesday and scheduled it to post Wednesday, but whatever timezone it’s in is completely different than ours.
