It’s my first WIAW blog post – how exciting! I am actually kind of excited… I’m a dork ;p
So again, apologies for the crappy picture quality, maybe Santa will take pity on me and get me a new camera.
I made my absolute favourite breakfast last night before bed so it would be ready for me this morning. Overnight Oats inspired by http://ohsheglows.com/2010/04/08/easy-vegan-overnight-oats/. I love this bowl of awesomeness in the morning, it really gets me going for the day. I make it a little different every time, this morning it was the basic recipe, but I added a tbsp of carob and used mint extract instead of vanilla and added some unsweetened coconut on top. I ate while reading and I think you can see a bit of my pink fuzzy jammies in there too haha.
Wednesdays are my volunteer day at the library, and I’m so hungry by the time I get home I sometimes end up eating more than I need to, so I am getting in the habit of packing lunch.
How cute is my lunch bag?
I had errands to run after volunteering so I sat in the car, ate my lunch and read my book. I didn’t remember to take a picture until after a few bites, but check out these tasty leftovers:
I will be posting this recipe in the near future – it’s one of my better creations for sure!
I forgot to take a picture of my morning snack (an orange and some cashews). Then I continued on with my errands and hit up Whole Foods for the weekly pick up. And I ran into an evil temptress…
I’ve been getting in this bad habit lately of buying myself a treat when I go to Whole Foods and I was thinking today would be the perfect day to get out of that habit as I would be recording everything I ate. Ah well. I’m not going to guilt myself about it. It tasted pretty darned good and the ingredients are actually not bad (no refined sugars, raw, gluten free, etc). To my Ontario friends, I can no longer find Sweets from the Earth products, but these are a good replacement and the ingredients are even healthier in my opinion.
And when I got home, I was still a little hungry so I had another snack:
It’s butternut squash season here, so I wanted to make something with it that wasn’t soup and came across another recipe from Angela http://ohsheglows.com/2012/09/24/roasted-butternut-squash-with-kale-and-almond-pecan-parmesan/. It was super tasty – try it out:
I just had one bowl and also had some guaccamole and veggies, but the picture didn’t turn out. And for dessert:
