And today brings a close to our beloved MoFo 2015.


I had a lot of fun with not just this last challenge, but the whole month. There were times I felt on top of the world with awesome posts and recipes! And other days… not so much. But overall, I feel it went a lot better than last year. I had some fun creative moments and made some awesome friends that I look forward to getting to know better in the blogging world. I hope you all had fun and enjoyed it =)

30 Fusion Challenge!


I could have been more creative with this fusion challenge. I made a fair amount of Mexican and Italian over the past month. But I have never tried combining the two and why not try the fusion challenge with my two favourite cuisines? I chose a cross between pizza & a tostada (tostizza!).

Tostizza (serves 1)

1 corn or rice tortilla
1 tbsp of pizza sauce (I use store bought – homemade would be great)
2 tbsp of black beans
2 tbsp of corn
2 sundried tomatoes (soaked for a couple of minutes in warm water and sliced)
1 clove of garlic, minced
a sprinkle of fresh or dried basil (I only had dried)
2 tbsp of homemade nacho cheeze (store bought would work)
1/4 of an avocado, sliced
a sprinkle of vegan parmesan (I used parma)
a dash of fresh cilantro

Preheat your oven to 350. Spread the pizza sauce evenly on the shell. Add the black beans, corn, sundried tomatoes, garlic, basil & nacho cheeze on top of the sauce. Bake your pizza for 10 minutes, and then broil it for a couple of minutes. Once cooked, add your avocado, vegan parmesan & fresh cilantro. I thought it might taste a little weird, but I quite liked it =)

  1. I would definitely eat this. I think you can put anything on a pizza, and use almost anything as a pizza base, and it will taste amazing. Except for capsicum, that should never be on anything. Devil vegetable. I like your name for it, Tostizza, it’s cute. :)
    It has been a great MoFo, and I am so glad that it brought us together. 😀 I look forward to continuing to read your blog forever!

    1. No peppers huh? I have to admit that it normally does make it into my pizza rotation. I will be sure not to include it if you should ever come for pizza though ;p
      I like mashing names, it makes things more fun.
