Ok… so after apartment hunting, job hunting, training for a half marathon – it hasn’t left much time for blogging. But I really want to make this work. We decided to nix moving and stay where we are. I did get a new job though. It’s pretty cool and it’s part time, so it should give me the time I want to work on the blog and do volunteer work and spend lots of time with Sunny. Yay! It may take me a bit to navigate everything and get into a good routine. Until then, I leave you with this lovely cauliflower recipe.
I have a hard time getting into “winter” foods since we live in sunny California. We’re not much for soups and stews. But we did get a bout of rain for a few days, so I was leaning more towards warm, comforting foods. And I was inspired to make something simple that could be a nice side dish or added in something else, like OhSheGlows Dal recipe. Oh my goodness is it ever good in dal.
1 medium head of cauliflower, thoroughly washed, de-stemmed and cut into bite-sized pieces
2 tbsp of coconut oil, melted
1/2 tsp of cinnamon
a pinch of salt
Preheat the oven to 375 and start preparing your cauliflower. Place the chopped cauliflower into a large mixing bowl and add the melted coconut oil, cinnamon and salt and stir until well combined. Bake for 30-40 minutes, until a fork can be easily inserted into the cauliflower and it is slightly browned.
