One of the things I love best about summer (besides all of the obvious things like sunshine and warm weather of course!) is the seasonal foods. Terry took a canning workshop a few years ago and learned how to make and can salsa. The canning part kind of freaked him out (botulism etc)… so we decided to just make fresh salsa in the summer and eat it up within a few days. He isn’t much for cooking as he doesn’t really like to, but he can make a mean salsa and his recipe inspired this.
Now what makes this salsa sassy? Me of course! Ok… I’m kidding. I just like using the word sassy. I volunteer at a local YMCA to teach a dance class. I make all of my own choreography to current & popular music and most of my inspiration comes from latin moves (salsas and mabos and hip rolls) and I like to cheer out for everyone to be sassy!
2 cloves of garlic, chopped
1/4 of a red onion, chopped
1 small jalapeño, seeded & minced
1/2 green pepper, chopped
2 tomatillo tomatoes (if you can get your hands on ’em – they really help add to the flavour)
2 medium tomatoes (I used vine ripe – I’m sure you could use any kind really), chopped
the juice of half of a lime (fresh squeezed is preferable)
a handful of fresh cilantro (use coriander if you’re in a pinch)
sea salt & pepper to taste (a sprinkle of each)
**if you’re like my hubby and like it spicy – add a habanero pepper & some cayenne or hot sauce
Pulse all of the ingredients in your food processor until it reaches a texture you prefer for salsa. I like mine very fine, I’m not a big fan of chunky salsa.
Now, normally, I prefer to eat this with chips. I have found some great gluten free (and corn free!) chips to eat this with, but as discussed earlier in the week – I’m kind of trying to stay away from chips right now. Instead, I took some cucumber, sliced it up and dipped it in. YUM. I bet celery would work too. Or some raw crackers. If you’re not avoiding chips and you’re not on a completely raw diet – go for the chips =)

On a side note, yesterday was my 7-year wedding anniversary. I’ve been with my husband for 14 years now and I love him more now than I did when we first met. I think I fall a little more in love with him every day. I don’t need him, but I want to be with him. I’m happier with him, I’m stronger with him, he makes me want to be a better person. I am a better person because of him. I look forward to many more happy years with him =)
Ok, sappy part done – I just wanted to show a few pictures of the amazeballs dinner I made us!!! It was *so* good.
We do not normally eat nearly this much for dinner!! But it was a special occasion and I wanted to make it more special =)
And we didn’t eat all of this – some of it was saved for leftovers. I tried out a bunch of new recipes that I found recently and want to point them out for you because they are *so* good =)
From top to bottom: Mushroom Pizza Bites (I actually went to wholefoods today to buy almonds to make the almond ricotta as I was out and forgot! so I improvised with nooch, sesame seeds & herbamere – worked quite well) & Portobello Tacos (I made this into a salad instead of using tortillas). Black Bean Cashew Quesadilla on rice wraps. This is the salsa from the above recipe & some homemade guac. And the bottom right is Raw Molten Lava Cake. We put the salsa & guac on our salad and quesadillas, but couldn’t eat much as we were full from the mushroom dishes & wanted room for dessert. Epically good meal =)
