Ok, food fusion is not my strength. I struggle to find my creativity on things like this, I feel like last year wasn’t so great for this challenge. So this year, I spent a little more time and effort on it and I think it worked out pretty well.
10th: Fusion Food – Take two cuisines and make them work together.
What if Japanese food and Mexican food got married?? I think it would be awesome! All things avocado and shoestring cut veggies infused with cumin, paprika & chili seasoning. Yes, please! That’s how this Sushito was born =)
Sushito (makes 1)
1 nori sheet
1 tbsp of cashew cheeze (I used this recipe and added fresh, grated ginger)
1/4 cup of walnuts, chopped
1/2 tsp of coconut aminos
1/4 tsp each of cumin, paprika & chili powder
1 small carrot, cut into thin matchsticks
1 persian cucumber, cut into thin matchsticks
1/2 of a small tomato, chopped
1/2 of an avocado mashed with a bit of lemon juice & a sprinkle of dulse flakes
cilantro & gomasio , for garnish
Place your nori sheet out flat on a cutting board. Layer your cashew cheeze and grate some fresh ginger on top. In a bowl, add your chopped walnuts and spices with the coconut aminos and mix well. Layer this on top of the ginger & cashew cheese. Next up, add your veggies and then your guac and finish it off with the cilantro & gomasio garnish.
Carefully roll it up and enjoy!
