Simple Bowls

You have non-vegans coming for dinner. What is the first thing that comes to mind for your menu plan? Salad is fine, but kinda boring. Pasta is fine, but a little overdone. What about a bowl?


My in-laws are visiting and I wanted to make them something they would enjoy. Perfect for today’s theme!


14 Share something vegan (and delicious, duh!) with a non-vegan. 

They have been visiting for the past week (my apologies for slacking on reading your blogs – I’ll be back at it and caught up in a few days!). I did make them salad and pasta haha. And we bbq’d one night, but the first night I made them a good bowl filled with grains (pink rice!), tons of veggies and some protein (I got them to try tempeh woot!).


Non-Vegan Friendly Simple & Delicious Bowl (serves 4-6)
1 cup of rice of your choice
1 vegetable bouillon cube (optional)
1 8 oz package of tempeh or tofu
4+ cups of veggies (I used sweet potato, broccoli, zucchini, pepper & snap peas)
seasoning of your choice (coconut oil, coconut aminos or soy sauce, salt & pepper, minced garlic & ginger, dried ginger & dill)

Boil 1 and 3/4 cups of water and simmer the rice until all of the water has been absorbed (keep an eye on it – it’ll take 30-40 minutes). I also added a vegetable bouillon cube to mine for a little extra flavour. Grab a wok and heat it on the stove on medium heat. Add the coconut oil and cook the tempeh approximately 8 minutes or until lightly browned. While the rice and tempeh are cooking, peel & chop your sweet potato and boil it or steam it for about 5-7 minutes and set aside. Once the tempeh is cooked, set it aside with the sweet potato, give your wok a quick rinse and heat it back up. Add a little more coconut oil and the garlic & ginger. Sautée your veggies until the start to soften, add your seasonings and fold in the sweet potato & tempeh. Layer some bowls with the cooked rice, then the veggies & tempeh and garnish it with the some cilantro or parsley.


Supper is on the table in 45 minutes or less! We actually followed this up with the Blueberry Ice Cream Cake and they loved everything. My father-in-law especially liked the ice cream caked and licked his plate clean haha ;p
