I mentioned in a recent post that a Doctor my husband is seeing has him trying an elimination diet. Here are just a few things he cannot eat for the month of August:
onion, garlic, beans (?!), gluten, dairy (yay!), apples, mangos, beets, green pepper, fennel, asparagus, broccoli

And those are just the things we eat on a regular basis (besides dairy). I’ve been having to be fairly creative in the kitchen, but am always up for a challenge. We quite enjoy making pasta though and as much as I love making my own almond milk, and more recently, my own nut butter, I’m not a fan of making my own pasta sauce so we tend to buy it. It all has garlic and/or onion in it. All of them!!! Fortunately, it’s tomato season here and I came up with this:

So simple too! I really just threw together some tomatoes, some basil and a bit of coconut water:

It was the first thing I made in my new Vitamix. By the way, I am totally and completely head over heels in love with it. It is worth every single hard earned penny =) We have been saving for this puppy for quite some time and it is great!

Back to the sauce though.


1 handful of cherry tomatoes

1 large heirloom tomato (I found a pretty purple one)

1 medium vine ripe tomato

1 very generous handful of basil

a splash of coconut water

Throw it all in your blender or food processor and blend it up. That’s it!

I also roughly chopped up some almonds and mixed the meal with some nutritional yeast and a bit of herbamere for a fun & cheezy topping.

 And I thought it might be fun to enjoy it over some multi-coloured zucchini noodles. I just sliced them lengthwise with my mandolin – nothing fancy, they just ended up looking pretty =)

This is a great meal on those brutally hot nights (like we’ve been getting) and you just don’t feel like cooking.

I have to admit, I’ve been a bad bloggy friend this past week and a bit, I’ve been crazy busy with life! But my weekend goal is to get caught up on reading all of your entries =)

    1. He quite liked it – poor guy. It’ll be nice once this is over. It won’t be so bad to completely eliminate a few things if he is sensitive to them, but giving up so many things is a little rough. And he is feeling better =)

    1. I have a feeling he is not sensitive to garlic & onions at least – it’ll be nice to be eating those again haha ;p
      But it’s giving me a nice challenge to eat more simply, which is nice.
