I’ve been laid up with a sprained ankle recently and the good Doctor told me to stay off my feet for the entire month of November. Yikes! I’ve been trying to take care of my body and take it easy and I’m trying to cleanse a bit while doing a mostly raw diet.
Needless to say, I’m going a little stir-crazy being laid up as Netflix can only amuse me for so many hours a day. Fortunately I have a balcony outside my apartment and managed a little sunshine earlier today for lunch. How inviting is this?

Sadly I was halfway through eating it before I remembered I had wanted to take a picture to post ;p It was a large tabouleh salad. I had some leftover fresh mint that was slightly past it’s prime so I mixed it with some quinoa I had sprouted over the weekend and cherry tomatoes, cucumber, green onion, fresh lemon juice, a bit of olive oil and a sprinkle of sea salt and pepper. I served it over a bed of red leaf lettuce. It was pretty tasty.
