Raw Pad Thai

Good morning sunshine! How are you this morning? It’s almost the weekend =)

If you’re anything like me, you may be experiencing some warm weather. It’s been pretty hot in Northern California, so I’ve been getting more and more on the “raw” wagon.  And on Wednesday’s post, I mentioned I had made a raw pad thai to enjoy picnic style by the ocean. Perfect way to cool off!

I made a batch of this up the morning before our beach picnic and put some aside for lunch the following day and it was even better! So if you have a chance to let it sit, try and be patient as it’ll be worth it.

This is the perfect hot afternoon lunch, and a great addition to any potluck.

Raw Pad Thai (serves 4)

Dressing

2 heaping tbsp of almond butter (I’m sure any nutbutter would work fine)

1 tbsp coconut aminos (soy sauce would work if you don’t need it to be raw)

1 tbsp of ginger, minced

1 tsp of lime zest

the juice of half a lime

a sprinkle of chili flakes

-Combine all ingredients and mix well

Base & Veggies

1 package of Kelp Noodles (I rinsed & cut these into smaller pieces)

1/4 of a red onion, sliced

1 medium zucchini, sliced into rounds

1 large carrot, sliced into rounds

1/2 a yellow pepper, sliced

1 large handful of snap peas, trimmed & cut into bite-size pieces

4 mushrooms, sliced

1 handful of sunflower seeds

1 handful of fresh mint

1 handful of fresh thai basil (optional)

-Mix the veggies from onion to snap peas in a bowl and add the dressing and mix it all up. Place on top of the kelp noodles and then sprinkle on the sunflower seeds, mint & thai basil. I also tore up a sheet of nori and mixed it in too.

Ginger used to be my secret ingredient. Fresh ginger that is. I love adding it to things as it really adds to the flavour of things.

That was until I tried using the thai basil! Oh my goodness did that ever give the pad thai a unique flavour. It was so good! I had never tried it until recently. A friend gave me some in a pot to grow on my balcony. I was intrigued, but wasn’t sure what to use it with. It was meant for this dish =)

I can’t wait to try and think of other fun dishes to try it in. I already have an idea for one – stay tuned!

  1. What a salad! Looks yummie. Great to hear you have warm weather. Enjoy lovely! We had super nice over here in Sweden until two days ago and now it is pretty cold and rainy. Typical Swedish summer, you don´t know what to expect 😉 Warm one day and rainy the other haha. We are excited for our Ghana trip in July. Then we will definitely have SUN and HEAT!   2. Looks delicious! I agree that Thai basil really adds something extra (along with fresh ginger!). I can’t always get Thai basil and then found it jarred (with nothing else added except water) and it is lovely to have in the fridge.

    Now I want to make this salad! Although no idea how you’d get four servings out of it… I could easily polish off the whole deal!

  4. Life is getting a little crazy around here, and I can’t believe it took me this long to pop over. This looks incredible! That dressing has me a little gaga. And I’m thankful that I haven’t packed my Vitamix yet! I’ll be drizzling that over whatEVER is in my fridge tonight. YUM!!
