Is it just me, or does anyone else feel like this during that not so great time of the month:
Yea… I was doing really well with the Healthy Eating Challenge this month. I managed to get through a stressful event without stress-eating like I normally do, with proper preparation. But then, I had this incurable chocolate cravings. I HAD to have some. And instead of rationally thinking it through – I caved and went for the amazingly delicious, yet not so healthy Justin’s PB Cups. Let me start out by saying that eating these once in awhile is fine, but 2 packs a day for a few days is not the greatest idea. After thinking about it though, next time, all I need is a little prep ahead of time.
Enter PMS Bites!
You can make a big batch ahead of time, the recipe easily doubles or triples (or more!), keep them in the freezer and have them on hand when you feel those chocolate cravings creeping up on you. The best thing about them is they are pretty rich, so after eating just a couple, you feel satisfied and happy =)
There is definitely less guilt involved than store bought variety, they are versatile, they whip up faster than going to the store to buy something and you most likely have all of the ingredients on hand.
PMS Bites (makes 6 bites)
6 dates, soaked in warm water for 5-10 minutes (reserve the soaking water)
2 tsp of date soaking water
1 tsp of coconut oil
1 tsp of cacao or cocoa powder
1 heaping tbsp of almond butter (or nut butter of your choice)
a pinch of sea salt
cacao nibs for rolling the balls in (or shredded coconut, hemp seeds, chocolate chips, etc
Throw the dates, soaking water, coconut oil, cacao powder, almond butter & salt in your food processor. Use the small bowl attachment or mini processor if you have one, or double the recipe as it will be easier to process. Process until everything comes together and forms a dough-like ball. Put the cacao nibs in a drinking glass. Using slightly damp hands, scoop the processor mixture with a teaspoon and form into small balls. Put the formed ball (one at a time) into the drinking glass with cacao nibs and shake the glass around until the ball is covered in nibs. Place on a plate, continue with the rest of the mixture and then put in the freezer for about 15 minutes to set. You can eat them straight after coating them, they just will be pretty soft.
