Loaded Baked Sweet Potatoes

I have been trying my hand at making quick meals in the aftermath of a days work, workout, driving the pooch to daycare and trying to keep up on housework. Gah. It really is never ending. And I will be honest, these loaded spuds are not super quick. However, they are easy and you can do most of the prep work while the potatoes bake. My kinda meal. I’m not sure I’d make these during the week, but they made a perfect Sunday meal with a nice salad.

Loaded Baked Sweet Potatoes 

2 medium sweet potatoes, washed, scrubbed and sliced in half, lengthwise
Bake potatoes at 350 until a fork is easily inserted (about 45-50 minutes).

Tempeh Bacon
1 8oz package of tempeh, crumbled
2 tbsp of soy sauce or coconut aminos
1 tsp of maple syrup
a few dashes of liquid smoke
Combine all of the ingredients in a bowl and mix up. Allow it to marinate for 20 minutes. Heat a wok on the stove on medium heat and cook the tempeh crumbles for 10 minutes, stirring often.

Nacho Cheeze
1 cup of cashews, soaked for at least 4 hours
1 small bell pepper (red or orange)
1/4 cup of nutritional yeast
1/2 tsp each of garlic powder, chili powder, dried cumin, dried coriander and paprika
salt & pepper to taste
Put all of the ingredients in a blender and blend it up until creamy. I had to add a bit of water to get it to blend better (and I was low on patience haha ;p)

Guacamole
1 large, ripe avocado, pitted and scooped from the flesh
the juice of a lime
salt & pepper to taste
Combine everything in a bowl and mash the avocado with a fork. Stir to combine.

Once the potatoes are done, add the prepared tempeh bacon, nacho cheeze & guacamole.

I also added some fresh cilantro and a sprinkle of paprika to garnish.

We thought we’d have leftovers… we were wrong 😉

  1. These look really good. I love loaded baked sweet potatoes and potatoes. Though I always end up needing to bake my potatoes for way longer.

    1. Definitely not quick, but worth the effort. It’s definitely a weekend meal, not easy for weeknights. I really do like trying to make a good, time-consuming meal once a week though. Especially if I’ve had frozen pizza twice during the week haha

  2. I love sweet potatoes baked like this and then overflowing with yummy stuffing. Tempeh is really hard to get where I live, even when I go into the city of Cardiff its hard to get, but I will always try as recipes such as yours tempt me .

    1. It’s too bad that tempeh is hard to find where you are… it’s definitely my favourite protein source. Although I think black beans would work really well and would be less work to use as well.
