Lemon Baked Tofu


We’re still on a lemon high in this household. And enjoying every minute of it. I have been enjoying your lemon suggestions, breaking out of my comfort zone to try new things and coming up with some recipes of my own too.

And just plain old adding lemon to everything 😉


Lemon Baked Tofu (serves 2-4)
1 8oz package of tofu, rinsed and cut into cubes
1/3 of a cp of fresh lemon juice (about 1 large, really juice lemon or 2 smaller)
2 tbsp of tahini
1 tsp of soy sauce
1/2 tsp of dried turmeric

Whisk all of everything except the tofu in a bowl. Place the cubed tofu in a shallow dish and pour the marinade on, stirring it up and allow it to sit for at least 30 minutes. Preheat the oven to 350. While it’s marinating, you can chop some veggies for stirfry and get some rice cooking. Add a tablespoon of flour (I used brown rice) to the marinated tofu and toss to coat. Bake for 25 minutes.

We served this with stirfried veggies and black rice soba noodles.

    1. Oh I always love lemons. I could enjoy them in just about anything. Although I am also partial to lemon & tahini (and nutritional yeast!!!), I make a lot of dressings from lemon & tahini. So good. I love that you have your own lemon tree =)

  1. I like citrus things but need to be in the mood for them, my husband adores lemons and wishes I make more lemon cakes, lemon meringue and lemon cheesecake – I make other things. We have blood oranges at the moment which I am loving. Your lemon baked tofu has me hankering for tofu, I am hoping to make some tofu scramble come this w/e.

  3. This sounds so simple and yummy. I recently purchased several lemons… they were on some sort of weird sale where it was $2 for 1 lemon or $3 for 5 lemons, so of course I got 5. You are giving me inspiration!
