Lemon Artichoke Dip


Creamy, dreamy drool-worthy dip. I will not even attempt to tell you that this recipe is healthy. It’s not. I will give you an option to make it slightly healthier, but who are we kidding? It’s artichoke dip, it’s fatty, salty and ah-mazing. And sometimes it’s ok to have a lazyย relaxed Saturday and cap it off with a movie night with some chips and dip.


I sometimes book our weekends filled to the brim, so lately, we have been enjoying quieter times. Cozied up on the couch with a pup ย curled up between us, nothing beats it for me =)


Unless you add chips and dip haha.

Further to a post I made a little while ago, I have recently come into a lot of lemons. So you will be rewarded with looooots of lemon recipes ๐Ÿ˜‰ ย ๐Ÿ‹ย ๐Ÿ‹ย ๐Ÿ‹

Lemon Artichoke Dip (should probably serve 4-6… served 2)
1 cup of cashews* (soaked for 4-8 hours, drained & rinsed)
1 14.5 jar of marinated artichokes, (reserve 1/4 of the artichokes and use 2 tbsp of the juice in the dip, drain the rest)
the juice of a lemon + 1 tsp of zest
2 tbsp of nutritional yeast (optional, but gives it a “cheezy” flavour)
1 clove of garlic
salt & pepper to taste

Preheat the oven to 350. Add the cashews, the artichokes (except for the reserved 1/4 cup), lemon juice & zest, nutritional yeast, garlic and salt & pepper. Slowly blend the mixture adding splashes of water when needed. It should come out super creamy, be patient, it takes time. Put your mixture in a casserole dish. Take the reserved artichokes and roughly chop them. Take half of the chopped artichokes and stir them into your dip. Take the other half and top your dip with it. Season with a bit more salt & pepper before baking it in the oven, uncovered, for 25 minutes.

*Use half cashews & half white beans or chickpeas for a slightly healthier dip


This can be enjoyed with fresh, crunchy veggies or chips. It makes a fabulous potluck dish or a fun appetizer for a dinner party.

  2. Compared to most of the recipes I’ve got for artichoke dip, which include large quantities of Tofutti Cream Cheese (and sometimes also vegan mayo), this looks pretty healthy to me!

    1. My acid reflux may disagree with you… but that may have been more to the large quantity of potato chips I ate with it ๐Ÿ˜‰ I suppose it’s not so bad, but should probably be shared amongst more than 2 people…

  3. This is amazing KImmy. We don’t have Artichoke dip in the UK, not seen them about. My husband loves both these ingredients, so this is on my t make list. Looking forward to your lemon recipes, my husband will thank you for them, well i will on his behalf.

    1. Oh great! You don’t even need fresh artichokes for this dip. I’m sure it would make it better, but jarred/canned is easier and sometimes you need something easier. I hope you enjoy it. Stay tuned for all of the lemon things!!

  4. I actually think this looks really healthy! If I had it on my site I’d probably have “healthy” in the name. It usually all whole foods and you know I love that! I’ve seen so many with store bought vegan cream cheese ingredients (not that I’m hating, I love those too) but yours is definitely more healthy than that!

    Curling up on the couch with the pups between us is our favorite thing too! I’m going to make your delicious dip and do just that this weekend. Writing down artichokes on my shopping list now!

    1. Maybe it’s not as healthy with the quantity of chips we ate with it haha ๐Ÿ˜‰ I hadn’t even thought to put cream cheese in there. I’m actually not a huge fan of the stuff, so that’s probably why.

  5. Oh this looks so good!! I love artichokes and you had me at dip lol. I agree- there’s nothing quite like veggin’ out on the couch for a night in and a good movie (with dip!). Excited also about the lemon recipes!!

  6. Oh my gosh, I want ALL of this… and I’d probably eat it all in one go. I don’t have any discipline with dip. I love the promise of more lemony goodness to come, too! :)
