Kiwi Lime Chia Pudding


Anyone else getting ready to get their GREEN on? I am actually Irish. Well, like a quarter Irish. My name is very Irish and my father shared his twinkly blue eyes & fair complexion with me. And I have the trademark freckles. I grew up embracing my ancestry… to the point of wearing green and eating green. The only kind of green drink I’ll have is a green smoothie though 😉

It’s easy being green! With lovely foods like kiwis & limes.


I gave some thought to making a complicated recipe, but ultimately went with something simple. Chia pudding for the win!

Kiwi Lime Chia Pudding (serves 2)

3 tbsp of chia seeds
1 cup of almond milk
2 kiwis, peeled & sliced
the juice of a lime
2 tbsp of liquid sweetener (I used bee-free honee)
homemade green food colouring (1/8 tsp of spirulina + 2 tbsp of water & mix well)

Start by whisking your chia seeds & almond milk together in a medium-sized bowl. Stash it in the fridge for at least 2 hours (preferably overnight to allow it to thicken). Once it’s thick, add the lime juice, liquid sweetener and homemade green food colouring. Start layering!


I started by adding some of the chia pudding to the bottom of my parfait glass, then add a layer of sliced kiwis, more pudding, more kiwis until your glass is full.

  1. I have kiwi fruit and limes sitting in my fridge right now, so I think I will make this for St Pat’s Day breakfast! I usually make something green for St Pat’s Day but this year I’m not prepared at all! I’m partially Irish too…maybe 1/16th Irish? Haha 😀 hope you’ve been having a great few weeks Kimmy <3
