Happy Friday folks! I have been enjoying a fun-filled week with my in-laws. We have been touring and exploring. One of the things I like best about playing tour guide is I typically get to see some things that are new to me as well. Like the Lighthouse at Point Reyes National Seashore:
Pretty spectacular, huh? That being said, I have been a busy bee and haven’t been able to devote much time to blogging. My apologies, I hope to get caught up in some semblance next week. In the meantime, let’s share some recipes =)

I will be honest… I may have picked this based solely off of cuteness factor. At least to start with. But after reading the recipe, it not only sounds delicious, but is a quick & easy meal to make. And it’s adorable.

And from adorable to hilarious! This is great for kids and adults alike. This is a truly clever Halloween dish. It will definitely be on my menu next year!
No Bake Pumpkin Pie Bites from Running in a Skirt:
I am really on the snackball wagon right now. Make a big batch on Sunday and have healthy, homemade snacks all throughout the week. I find it helps stave off my sweet tooth. I typically make chocolate ones, so I am really enjoying seeing recipes like this with more variety. Perfect post-run snack.
Butternut Squash Quesadilla from Courtney’s Cookbook:
Courtney had me at mushrooms on this one haha. Gotta love the mushrooms. But as someone who tends to just simply roast squash or make soup our of it, making a nice, savoury quesadilla is a nice change. And swapping in rice wraps easily makes it gluten free. Yum!
