Healthy Vegan Fridays #87

Happy Friday! I am gearing up for a busy weekend. With hiking, volunteer shifts galore and so much prom organizing. I will be a busy gal. I hope your weekend is a little more relaxing than what I have in store ;p I’m excited for you to share your recipes as I definitely do not have time to pour over cookbooks or think of new recipes =)

Are you new to HVF? Check out all of the info right here.

There were some stellar recipe submissions last week, let’s check out a few favs.

Aquafaba Crêpes with Haggis from Green Gourmet Giraffe

haggis pancakes

I never imagined that haggis could sound appealing, whether in it’s traditional form or a veganized version, but Johanna but proves me wrong with this delectable dish. Another great use of aquafaba in these creative crêpes.

Baked Yucca Fries from Strength & Sunshine:

How is it that Rebecca finds new foods every time I check back at her blog? This chick totally has the low down on all of the new, cool foods. Don’t be scared off by the caloric content of these carb-filled beauties – they sound absolutely perfect for a post-workout snack!

Chocolate Turtle “Cheesecake” from Sandi’s Allergy Free Recipes:

Sandi had me at Chocolate Turtle. Oh my goodness! I know Valentine’s Day is over… but I think I’ll make this just because haha =)

This week I’m sharing my Lentil Tacos & Cumin Lime Roasted Veggies:

Have a super weekend!

  1. You go-getter Kimmy! This weekend, I’ll literally be sitting on my hiney, making sure my kids don’t kill each other, lol. Thanks for hosting, your submission looks yummy! Tacos are a favorite around here. :-)

    1. I can’t wait to make your cake – it’s in my short bookmarked list! I have not yet made cashew milk (probably ever other kind of nut milk but cashew!) and can’t wait to check it out =) Thanks so much for sharing!

  2. Happy Friday, Kimmy!
Today I shared a Crunchy and Creamy Mango Raw Almond Granola Chia Seed Parfait and Raw Maple Almond Raisin Coconut Oat Bars. Thanks for hosting this yummy vegan party!

    1. Super busy… but I see an end in sight!!! Not for a couple of weeks yet, but I see it nonetheless. I’m definitely managing to have fun 😉
Thanks Kyra – I hope you are having a fantastic weekend!

  3. Thanks for featuring the crepes – sounds like you will be busy this weekend – we have a pretty packed weekend – though half of it is just getting life organised and then there is fun stuff like a light show in the city tonight – just home and v tired!

    1. Haha you always have busy weekends, too! A light show sounds super cool actually. I hope you managed to get some downtime this weekend. I finally have a bit right now (hence, blogging haha). Thanks Johanna.
