Healthy Vegan Fridays #85

Good morning fellow bloggers! I hope you had a great week and are gearing up for a great weekend!  Any football fans out there? I love mere minutes from where all the action will take place this weekend… I have to admit, I’m less than excited. With an extra tens of thousands of people hanging around, things are already more congested. And street parties abound. Not my scene. If you are anywhere in the area – stay safe!

I am *super* behind on blogging. I’m sorry :( I’ve been having a losing battle with my to-do list this week and blogging has taken a back seat. I’ve been really focusing much of my energy on helping organize Vegan Prom.  If you are in the San Francisco Bay Area – you should definitely check it out! Part of my problem with blogging is that I like to read every. single. post. made by the blogs I follow. It can be time consuming if I have anything else going on in addition to my normal volunteer shifts. I will try to catch up on blogs next week – this weekend I need to unplug and recharge (with nature… not computers haha ;p).

Alright, enough chit chat. Down to business!

Chocolate Cherry Mocha Brownie Bites from Healthy Helper:

These would be a wonderful sweet treat for upcoming Valentine’s Day. Chocolatey goodness mixed with the sweetness of dried cherries combined with the nutty flavour of almonds & walnuts. These blissful bites are high in protein too! Score =)

So pretty! I love Valentine’s Day themed treats and these are perfect. Chocolate chips make these little heart shaped treats extra special paired with shredded coconut. One of my favourite combinations! Happy (belated) St. Dwynwen’s Day to my Welsh friends =)

Mint & Pomegranate Raw Cake from Vie de la Vegan:

So pretty! I am partial to raw desserts as I’m not much of a baker. I like how the lime juice would really enhance the flavour of the fresh mint in these little cakes. And the pomegranate arils really make a nice pop of colour. Another good Valentine’s Day option!

As I don’t quite have my Valentine’s Day recipe ready yet, I’m going to share these Sea Salt Caramel Chocolates from a previous year:

  2. I am a crazy football fan – specifically the Miami Dolphins (I fly down from NJ to FL to see them at least once a year). My husband’s family all lives in Charlotte so we’re kind of into seeing the Panthers will this weekend.

    BUT, I hear you about the crowds. I hated when the Super Bowl was in “NYC” – things got so crazy around here because the Giants/Jets stadium is actually in NJ not NY so traffic was a nightmare around here for a while. Stay safe!!

  3. Hi Kimmy, I’m with you–as you know, football isn’t my thing either, so having crazy snarled Super Bowl traffic would probably make me a little nuts too! And yay Vegan Prom!! I wish I lived near you; I would totally be there! Good luck with planning, and know that I do appreciate the thoughtful comments you leave on Veggie Quest. I know that takes time!

  7. I am glad I am not the only one who feels overwhelmed! I am a big READ EVERY SINGLE POST type of person. I have gotten a little better about it, skimming certain blogs that I am not so fond of, and I do follow some fashion blogs that little to no text. That vegan prom sounds like fun! I wish I lived in the area!

    1. Haha… oh I got even further behind!!! It’s so bad now. I think I’m 2 weeks out. Or more. I’m scared to look. I will start tackling it tomorrow and hope to get caught up soon. I think I need to learn to skim certain blogs.
      The vegan prom is going to be great – I wish you lived closer too!
