Healthy Vegan Fridays #74

It’s Friday!!! Can you believe November is just whipping right by? The month is already half over. American Tofurkey Day is less than a week away and Christmas is just around the corner. And… I’m *still* trying to get caught up on blogging. I appreciate your patience. Part of the problem is that I like to read everyone’s posts and try to comment on everything and it sometimes is hard to keep up (especially when I take on a crazy ton of volunteer shifts!). Anyway – I will be caught up by the end of next week! In the meantime, let’s focus on this week!

Purple Sweet Potato Gnocchi with Tahini Parsley Sauce from Strength & Sunshine:


How pretty is this??? Almost too pretty to eat! Almost. Almost. Ha =) I never really tried gnocchi, but this sounds so good! AND I tracked down some local, organize purple sweet potatoes at the Farmer’s Market this weekend. Rest assured, it is on my meal plan for the coming week. Yay gluten-free “pasta” =)

5-Minute Pumpkin Hummus from Veggie Quest:


Another gorgeous dish. These colours just pop. What a perfect snack to whip up if you have last minute company coming over. And it would make a perfect Thanksgiving potluck accompaniment. Bonus points to Lee for mentioning FIVE different ways this hummus can be enjoyed (you’ll never look at hummus the same way again!).

Maftoul with Roasted Harissa Rainbow Carrots from Allotment2Kitchen:


We are continuing with the pretty themed food – I love it! These carrots are way too pretty to just shred up for salad – they deserve to be a beautiful side. And the sauce is a very creative use of harissa – quite different than how I normally season my boring carrots ;p

This week, I’m sharing a recipe I made last year for Thanksgiving. My Wild Rice, Spinach & Tempeh Bacon Stuffed Squash.

  1. Hi Kimmy, thanks for featuring my hummus; what a treat! And don’t Rebecca’s gnocchi look amazing? I found purple sweet potatoes at my farmers market too, and I’m planning to make it once Thanksgiving is over.

    Oh, and I think I mentioned it before, but I’m a HUGE fan of your stuffed butternut squash. It’s a staple in my house now!
