I’m really excited to see HVF growing and I love seeing new bloggers coming over and sharing recipes =) And as Halloween is fast approaching, I really am excited to see some holiday themed recipes! I’m still try to adjust my tastebuds to enjoy kimchi more… but I bet I would actually enjoy it more in a delicious rice dish like this. Mary Ellen even uses a brand I enjoy for the kimchi =) This will be a great way to enjoy a healthier version of an old favourite.

Like to indulge? I do! There are ways of enjoying things without the guilt, cutting back on sugar of course. And adding veggies to treats is a good way to easily up our veggie intake.

(Also, you might not have realised but you accidentally named the title of this post Healthy Vegan Sundays, not Fridays…I thought for a minute you might have changed the day of the linkup!) :)

    1. I was at the store yesterday and I saw the Kimchi… I chickened out. I may try your rice without it (I realise that defeats the whole purpose!), but I will definitely try it with the kimchi at some point too. Soon!

    1. Deborah! I tried making the muffins this morning. They didn’t quite turn out, but it was my fault. I was kind of in a hurry and didn’t quite follow everything properly. And I tried halving the recipe (which never works for me). Although they weren’t as pretty as yours, they were tasty! I am going to try making them again, following everything properly & carefully =) Thanks so much!

  3. The bagels and donuts! YUM – put them ALL in my mouth, ALL at the same time…. 😀 I might need a little coconut milk to wash it all down though! Don’t need to choke! haha
