Before we get started on all of the wonderful recipes, let’s look at today’s theme of the day.

18 Honor a human or non human animal who inspires your veganism. 

I’ll be honest, I went vegan for health reasons to start with. I recently had my 5-year veganversary and I realised that health is still my primary reason, but environmental impacts and animal rights follow suit now too.

How cute his this vegan meme? And I never really thought about it that way, but it’s true. So although she wasn’t really in danger of being made into something edible, I still dedicate this post to my intelligent, loving animal =)

I love her to pieces and can’t imagine my life without her. I was going through a very rough time when I got her, she pulled me out of a dark place. She’s my constant, my best friend and partner in crime. So in honour of my pup Sunny who just inspires me to be a better human in general, I will spam you with pictures of her.

Thai Quinoa Salad from The Taste Space:

This is a super refreshing sounding salad! I haven’t had much luck cooking rice in coconut milk, but maybe it won’t be mushy if I try quinoa. The lime sounds great and the nooch is always welcome in a good salad =)

Chocolate Chip Pancakes from Sandi’s Allergy Free Recipes:

I’m sure I’ve mentioned my epic pancake fails before. It happens every 3 months or so. Just enough time passes that I forget how much I suck at making pancakes and want to try again. And guess what? It’s about that time again ;p Maybe I’ll have luck with these. I love that they are gluten-free. I have a hard enough time making pancakes let alone trying to convert to gf. And these are kiddo approved! Sandi’s 3 grandkids helped make these awesome-sauce pancakes and they loved them =)

Pumpkin Pie Snack Bites from Strength & Sunshine:

I think another name for these could be Fall Balls! So cute and they pack in all the goodness of the upcoming season. A perfect on-the-go bite-sized snack! I tend to make only chocolate snack balls – these are nice change =)

    And your refried bean bowl looks outta-control good–the nacho cheeze pushes it right over the edge. Plus so many yummy veggies–looking forward to trying it!
