TGIF! Whew! Long week for me and I am excited to have some down time this weekend. Especially since next week is the start of Vegan MoFo! Who is taking part this year? I’m excited… yet to be honest, also stressed. It is a ton of work. But I plan on having more fun with it this year. Anyway, down to our beloved Friday tradition.

Peanutty Pad Thai from Veggie Quest:
I love pad thai! It’s one of my favourite things to order at a restaurant. I like making it at home too. I’ve tried it a bunch of different ways, but I’m loving the sound of Lee’s spiralized veggie version. The dressing sounds especially good – I’d be interested in trying it with date paste.
Magical Grilled Peaches from The Taste Space:
All this time I’ve been eating plain old raw peaches – I’ve never tried them grilled. And the sweet and salty with a bit of smoky sounds insanely good. I bet they burst in your mouth. Mmmm.
Smoky & Sweet Peanut Slaw from Strength & Sunshine:
You guys are keeping with the peanutty flavours and smoky stuff. This is definitely a far cry from boring, regular coleslaw. The asian pear is a great addition to spruce up an old favourite, and well, the dressing sounds like the bomb.
