Healthy Vegan Fridays #62

TGIF! Whew! Long week for me and I am excited to have some down time this weekend. Especially since next week is the start of Vegan MoFo! Who is taking part this year? I’m excited… yet to be honest, also stressed. It is a ton of work. But I plan on having more fun with it this year. Anyway, down to our beloved Friday tradition.

Are you new to HVF? Don’t fret! All the info is right here 😉

Let’s see your favs from last week.

Peanutty Pad Thai from Veggie Quest:

I love pad thai! It’s one of my favourite things to order at a restaurant. I like making it at home too. I’ve tried it a bunch of different ways, but I’m loving the sound of Lee’s spiralized veggie version. The dressing sounds especially good – I’d be interested in trying it with date paste.

Magical Grilled Peaches from The Taste Space:

All this time I’ve been eating plain old raw peaches – I’ve never tried them grilled. And the sweet and salty with a bit of smoky sounds insanely good. I bet they burst in your mouth. Mmmm.

Smoky & Sweet Peanut Slaw from Strength & Sunshine:

You guys are keeping with the peanutty flavours and smoky stuff. This is definitely a far cry from boring, regular coleslaw. The asian pear is a great addition to spruce up an old favourite, and well, the dressing sounds like the bomb.

This week, I’m sharing my BBQ Baked Tempeh & Cilantro Lime Rice:

You guys shared some fabulous recipe last week, I am so excited to see what you bring to the table this week!  I need some meal ideas for the long weekend next week =) Share the recipe love, invite your friends! Don’t forget to link back.

    1. Baking really adds to the flavour. I like sautéeing it as well. I’ve never actually tried steaming it – I should give that a try. I think if you bake it, you’ll like it just as much as a restaurant (if not more!).

  1. Thanks for the linkup Kimmy! I’m participating in VeganMoFo for the first time this year, I’m sooo excited- I’ve been working on draft posts this week so I’ll be all prepared for September. It will be a lot of work but a lot of fun too, and a great opportunity to meet more vegan bloggers!

    1. I really need to get some draft posts together so I won’t be overwhelmed next week ;p It’s definitely a lot of fun and it is so great to meet new, like-minded bloggers =) Looking forward to seeing your creations Kyra =)
