Healthy Vegan Fridays #60

I’m hoping your starting the weekend off on the right foot! I am not :/ I had a morning yesterday. I morning where I discovered I had accidentally left the fridge open a crack alllll night long. I had to chuck my nasty smelling homemade hemp milk, my not even half eaten container of Miyoko’s black ash cheeze, a ton of Terry’s weird looking cold brew coconut milk coffee thingies and over $12 worth of coconut yogurt. Fun times. Ah well. As you read this, I am hoping to be enjoying a wonderful day with a wonderful friend in Pismo Beach.

I’ve been tempted to buy all of the delicious vegan ice cream in the freezer section at Whole Foods, but my wallet can’t handle that very often. This is the perfect summer treat!

Sweet Potato Breakfast Pudding from Bite-Sized Thoughts:


Sweet potatoes for breakfast is a new concept to me! I’m not a big veggies for breakfast kinda gal unless I sneak them into my smoothie. But sweet potatoes satisfy that sweetness craving. I like how simple it is to throw together.

    Thanks for featuring my Strawberry Ice Cream! Yes I am on an ice cream kick! I love ice cream. I bought one of those containers years ago, then couldn’t justify the cost, so I started making my own. Each year I try to come up with new flavours.
    I hope you have a great time at the beach!
