Healthy Vegan Fridays #52

Brief Healthy Vegan Friday detour – yesterday I wrote a post on Choosing Raw. I wanted to share this with all you bloggers so you know you are not alone if you are currently struggling with any ED issues. It was tough for me to post as it is very personal, but one of the things that helped me get better was reading other people’s stories and personal histories. I welcome any thoughts or comments =)

Now, on to HVF. Happy, happy Friday! Friday is my fav day of the week. It’s just so promising gearing up for a fun weekend. AND it’s the day we share our awesome recipes together! What more could a gal ask for?

I’m extra excited this week since we had so many extra submissions last week! Keep sharing your recipes and tell your friends to as well. As I like to tell the little ones I work with, sharing is caring 😉

Speaking of last week, let’s check out your favs:

Homemade Vegan Butter from The Taste Space:

OMG! Look at this creamy deliciousness. If you were to ask me something I miss from my pre-vegan days, I wouldn’t say cheese or milk or eggs… I may say butter. But this would sub any day. I love the idea of making homemade things, and making butter conjures images  of churning and life on a farm. I can’t wait to check out Miyoko’s new cookbook!

Tofu Tikka Masala from The Green Genie:

tofutikkamasalaIndian-inspired dishes don’t get old for me. Ever. This one sounds especially appealing with all of the different spices. A touch of coconut milk really brings this recipe together. Warming and delicious.

Gingerbread Cake with Lemon Icing from The Lazy Vegan Baker:

I love adding a citrus twist to desserts, especially in the summer. And there is just something about ginger in a dessert that makes it pop. Perfect sweet and spicy combination.

This week, I’m sharing my Salted Caramel Nana Ice Cream:

And this cute dog picture haha ;p

It’s time to link up! And don’t forget to link back. And get your friends over here sharing their recipes too! Have a fantastic weekend. Next week, I want to see some 4th of July inspired recipes =)

  1. Thanks for sharing your story Kimmy – I imagine that took lots of courage but it’s so helpful for people to see inspiring journeys like yours. I’m really glad things are on the up for you :)

I also love the look of your ice cream!! I’ve linked in lasagna made with hummus instead of cheese this week.

  2. Hi Kimmy,
I always look forward to Happy Vegan Friday! Today I shared ‘Spicy Vegan Portabella, Vegetable & Brown Rice Hot Pot’. I studied raw food diet planning and food preparation and followed the a raw regimen for several years. Right now I am eating both raw and cooked vegan foods but I still love and appreciate the value of a primarily raw diet. I have been thinking about returning to a mostly raw regimen for a number of reasons. Thanks for hosting!

    1. You know how much I love mushrooms! And the hot pot sounds awesome too =) I always love your recipes Deborah.
I tried raw for awhile, but my body tends to prefer cooked foods. I get a good mix of both though. Have a great weekend!
