Loaded Veggie Chili from Veggie Quest:
Chili is one of my favourite meals ever! It’s protein packed and warm & comforting and just pure awesome. I love how this particular recipe is brimming with veggies. It’s a little time consuming, but mostly just simmering – the prep time is super short and it’s quick & easy to put together. Perfect Sunday night fare.
Vegan Quiche with Tofu and Besan from Green Gourmet Giraffe:
I thought my quiche days were done after going vegan… man oh man does this look SO GOOD! I could just eat it right off my laptop here. I’m totally digging the addition of tofu bacon for a little more protein and just plain yum factor. So fun!
Ginger Snaps from Sandi’s Allergy Free Recipes:
These cookies are so awesome sounding. They are free of just about every allergen I can think of (I especially love that they are gluten free!) AND they have fresh ginger to boot!
