Happy Friyay! It’s Half Marathon Weekend!! Think of me this Saturday while I run it. I have no goals in mind, just to finish it and enjoy it. What are you up to this weekend?

Compassionate Vegan Shepherd’s Pie from Beautifully Bohemian:

I’m totally loving this Pie! First of all, it’s chock full of mushrooms, which are my favourite thing ever. And Randi updated an old favourite by using sweet potatoes giving it a bit of sweetness to add to the savoury and making it super pretty.

Chunky Chickpea Noodle Soup from Oatmeal with a Fork:

With all of the overcast and rainy weather we’ve been getting out in Northern California, soup has definitely been my jam. Filled with veggies and packed with protein from the chickpeas, this would make a great meal.

Roasted Broccoli and Apple Salad from Green Gourmet Giraffe:

Look at this fabulous salad! With the warm weather coming, I’m definitely looking to more veggies and salads as well. I like all of the contrasting elements in this salad and the crumbled protein would add that oomph factor!

Matcha and Green Apple Protein Waffles from And a Dash of Cinnamon:

Look at these pretty, green waffles. These would have been perfect last week for St. Patrick’s Day, but they would be perfect any time. This is inspiring me to try using matcha powder.

This week, Mary Ellen is sharing her Vegetable Bean Casserole:

Overfilling with veggies and beans, this casserole makes for a hearty dinner. The nooch and cream cheese would lend that cheesy flavour and creaminess that I love. And the crumb topping bakes golden-y brown to give it even more depth. Yum!

I’m sharing my Lemon Baked Tofu:

I’m *still* trying to get through all of the lemons from the fallen lemon tree. So we’ve been enjoying all things lemon. This is one of our favourites – tangy and tart in a good way!
