Happy St. Patrick’s Day!


Any fun plans today? Involving all things green?? I have another long run today (11 miles!), last one before the half marathon. Woot! I think we will be enjoying some Mini Mint Coconut Cream Pies tonight (shared below) over supper with friends.

ermgosh!!! LOOK at this cake! It’s the prettiest cake I ever did see. And knowing Robin, it tastes as good as it looks. Maybe even better. I love the cute little characters surrounded in green fluffy frosting, the fun, colourful sprinkles & the absolutely perfect chocolate drips. How lucky am I to know her in person so I can sometimes partake in amazing treats like this???

Amazing Savings: How to Eat Healthy on $4.13 a Day from Veggie Quest:


You need to check this post out! I spend waaaay to much on groceries. And if I don’t plan accordingly, I sometimes have to throw food out and I just hate being wasteful. This post will give you a ton of tips to help make inexpensive meals and plan your meals out. Since I volunteer at the local food bank, I would really like to embrace a more budget-friendly way of life.

The Ultimate Vegan Mac N Cheese from Vegan Huggs:


Oh pasta, how do I love thee, let me count the ways… Mac n Cheese is one of my all time favourite meals and I love the thought of this vegan, gluten-free version, especially because it sneakily gets some veggies in the sauce. With all of the running I’ve been doing, I’ve been craving some serious carbs and this looks like the perfect way to replenish!

Peanut Butter Cup Overnight Oats from Running in a Skirt:


I don’t really even have to say much for this recipe now do I? Check out that decadent chocolate & peanut butter drizzle. These are overnight oats in all of their glory, the way they were meant to be enjoyed with the best flavour combo.

This week, Mary Ellen is sharing her Colcannon Soup:


This soup sounds amazing! I looooove potatoes. And there is just something about potato soup that makes me want to curl up and read a good book while I eat it. With the rain we are about to get hit with, this will be perfect. And I know some of you are experiencing some cold weather and icky snow, make yourself some delicious, warming soup. Perfect for St. Patrick’s Day too!

    Also, good luck with your half marathon. In the meantime, you eat those coconut mini pies–you’ll have MORE than earned them after an 11-mile run! You go girl! You’re inspiring me to get my butt back in the pool, lol.

  2. Good luck on your half marathon! I can’t imagine running that…or your 11 miles today. That would be nuts. I’d be lucky if I could be by with 1 mile and that would be really impressive I think. Therefore, I am super impressed! Def nice knowing that you’ve got tasty treats waiting for you at home to eat afterwards!
