Wild Rice and Vegetable Soup from Alison’s Allspice:

We’ve been enjoying more soup lately with the cooler weather. But sometimes I find they are super filling and it leaves me craving naughty snacks before bedtime. Adding wild rice and beans to this meal gives a wonderful heartiness.

Tahini Roasted Squash from Katering for Veggies:

What a fun, new way to enjoy tahini! And I’m LOVING that it’s still squash season. We’ve been inhaling squash left, right & centre. This will inevitably make it into our meal planning as a side, or it could be a meal all on it’s own!

Soba Noodles with Kimchi & Edamame from Fueled by Carrots:

I really love me a good noodle bowl. I am not a fan of kimchi, but maybe I could sneak some into my diet by disguising it in this lovely sounding bowl. This would make a great weeknight dinner as it’s quick and filling.

Pecan Pie Squares from Bite-Sized Thoughts:

Pecans do not get enough love in my kitchen. I tend to only use them in raw crusts. I like that they are the star of this show. The only dried fruit I have on hand right now is actually mango and I think it would go divinely on this!

Um, yes please! I wanted to make these this morning actually, but I don’t have quinoa flour – I will be acquiring some soon to try these out. Quote from Mary Ellen: “thought of you when making them because I know you can’t have gluten. :)”. How adorable is she? She’s my bestie that I have never met in real life (yet!). Maybe we can make some at the same time and have a virtual brunch together haha.

I’m sharing my Tofu Scramble:

It has more ingredients and is a little more labour intensive than my normal quick scramble, but so worth it. I make this a lot of potlucks, it’s always a big hit.

  1. Happy Friday Kimmy Dear! We really do need to meet sometime! I’m totally putting it on my to-do list. Even if I haven to find a cheap flight and fly there myself! We should plan a trip so we can do a race together. :)
