Healthy Vegan Fridays #140

Happy Friday my loves! This weekend is going to be a great one! We’re finally getting a wee break from allllllll of the rain we’ve been getting here in California. And I’m signed up as team lead on a room redecorating project for Make A Wish. Think of my while I paint away and try not to curse at my horrible ineptness at putting furniture together. Fortunately I have a great team to work with. What are your weekend plans?

With all of the rain we’ve been getting, I have been enjoying more filling, warming breakfasts. This baked oatmeal is perfect to cozy up with while looking out at a cloudy day.

Tomato Chickpea Salad with Cilantro and Lime from A Virtual Vegan:

I adore salads that POP with vibrant colours. I tend to make a salad similar to this, but with black beans, I think chickpeas is a nice change. And I like the big cilantro leaves to give the salad more fullness.

Sleepy Time Chocolates for Kids Insomnia from Beautifully Bohemian:

It’s always a pretty big bonus when something that is good for me is completely adorable. Although these are targeted to kiddos, I may just make them for myself when I get my bouts of insomnia from time to time.

Cinnamon Raison Peanut Butter from Courtney’s Cookbook:

Now here is a fun way to jazz up some nut butter. Give that slightly boring piece of toast some pizzaz! I haven’t made nut butter in a long time and this just reminds me that it comes together pretty quickly and it’s nice to make things from scratch when time permits.

This week, Mary Ellen is sharing her Lentil Bolognese with Spaghetti Squash:

It is squash season! And my husband, bless his heart, has this awesome spaghetti squash recipe he likes to make. But he makes the same recipe every. single. time. I have enlisted him to make this recipe this weekend while I’m away volunteering so I will come home to a bowl of awesomeness =)

  2. A wonderful collection of recipes once again! These little chocolates are so adorable! Does it work for adults too? 😉

    My weekends are very busy at the moment with planning our move but I still room time to relax a bit and cook a little.
