Healthy Vegan Fridays #139

I’m feeling ALL better. Thank you so much for all of the well wishes. My vision is almost completely restored too. Yay! I am looking forward to this long weekend. It will be filled with vegan tea parties, running, dinner dates and a girls day out. Woot woot! Here’s hoping your weekend will be a good one!

Luscious Lemon Cheesecake Smoothie from A Virtual Vegan:


So this makes me think of drinking a glass of pure sunshine. Soooo pretty! And I’m itching to try a banana-less smoothie (despite my love of bananas). I love the super secret protein/thickener trick too!

Chickpea, Peach and Pumpkin Curry from Green Gourmet Giraffe:

I am not one to normally think of combining sweet & savoury together, but the thought of adding sweetness to this curry sounds intriguing! And this of course leaves me wanting peach season to hurry up and arrive so I can try this and get creative.

Chocolate Covered Strawberry Smoothie from Running in a Skirt:


Holy moly! Can a smoothie get any more intense? Or awesome? I think not. I am seriously drooling over the pictures alone. Simple, yet delicious. And freezing the banana is a great way to get that extra creamy dreaminess.

Mary Ellen is sharing her Roasted Red Pepper Sauce:


I love the bowl! How cute. And I hate to admit that I have totally fallen in the trap of buying jarred tomato sauce. My mom used to always make hers from scratch. This will hopefully inspire me to get back in the habit of making my own sauce. Yum!

I’m sharing my Mushroom Potato Bake:


This comforting casserole is perfect for a lazy Sunday. Potatoes baked in creamy mushroom soup with some tempeh bacon is a great main with a crunch side salad.
