Mango Banana Carrot Smoothie from A Hedgehog in the Kitchen:

Veggies in a smoothie? It’s not something I typically do. I like my smoothies fruit-filled for a sweet start to the day. But the combination of carrot & mango has me pausing for thought – I bet it would be dee-licious! And a great way to sneak in some veggies.

Curry Tofu Bok Choy Vegetable Soup from Urban Naturale:

Is it just me or is bok choy a seriously under-rated veggie? It’s actually one of my fav veggies ever, but I know it’s not most people’s jam. I usually slice it thinly and hide it in a stir fry. But this flavourful soup would be a great way to introduce this under-appreciated green. Tofu and mushrooms add some nice bulk too.

Sweet Potato and Kidney Beans Seekh Kebabs from Allotment 2 Kitchen:

I always admire those that try making their own homemade creations like this. It’s not something that comes easily to me. Fortunately, there are people like Shaheen who are pioneers in the kitchen and make things easier for us. Sweet potatoes coupled with beans make for a tasty kebab – paired with a side veggie, it would make a perfect, hearty meal.

Potato Cakes from Delicioso, Another Name for Delicious:

I looooooove potatoes. But I will admit that I tend to just plainly bake them. Combining potatoes with veggies in these fun patties make for a quick mid-week meal. It would be great to use leftover veggies to clean out the fridge in these!

This week, Mary Ellen is sharing her Strawberries and Cream Overnight Oats:

I always make the same overnight oats – chocolate! I can’t wait to shake things up with this yummy strawberry parfait-like version. I’m totally trying the version with coconut whipped cream. This will help get me going in the mornings!

I’m sharing my Healing Pineapple Stirfry:

Ginger and pineapple meld to give your tastebuds a treat and give healthy benefits. Did you know they both help relieve inflammation? I’ll be chowing down on some of this over the coming weekend.

  1. So cute, love your puppy! I saw the picture on social media and my girls thought it was the cutest. So many delicious recipes, I’m happy I caught up this morning (well kind of) and got the link up email because I always forget and Friday’s are one of my busiest days and I get maybe 20 mins to sit down all day. Happy Friday!

    Thank you so so much for sharing my recipe and also, very kind of you to describe me as a pioneer. I have only once ever been called that when i worked for a charity in Scotland, so it brought back some good memories. Thank you.

    I am having another lazy weekend. my husband has been poorly and wants to take it easy – so other than some grocery shopping it will be a homely weekend.

    Mmm will start thinking about a Valentines recipe so share next week.
