Healthy Vegan Fridays #135

Happy Friday! Baby, it’s the freakin’ weekend. I am in cold, cold Southwestern Ontario, Canada right now. I did catch a couple of gorgeous sunrises though. Sunny has been enjoying the company of my mom’s dog, Peanut.

5-Minute Moroccan Salad from Eats Leeds:


I am totally into quick meals right now – especially during the week. I haven’t been as much fan of cold salads, but spices are warming and packed with protein from the chickpeas, it makes for a great lunch.

Dijon Mustard Salad Dressing from Veggies Save the Day:


I am totally guilty of being lazy with my dressing. Lemon + olive oil = done. I really need to branch out and be more creative with my dressings to make salads more appealing, especially in the cooler months. This will be a great start =)

Airfryer Potato Crisps from Masala Girl:


A girl after my own heart – we’re both sharing air fryer recipes today =) I have only tried making “fries” in my fryer, this is something different for me. I really love potato chips and think it sounds fun to make my own instead of buying the not so healthy store bought variety.

Thai Green Curry Tacos from Strength & Sunshine:


Who knew tacos could actually be pretty and so colourfully vibrant? Apparently Rebecca did! She really ramps Taco Tuesday to a whole new level of awesome with some asian inspired flavours.

Mary Ellen is sharing her Asian Baked Tofu with Shaved Brussels Sprouts:


Speaking of Asian flavours! Check out this glorious bowl of goodness. This flavour-packed dish comes together quickly & easily. Great for a weeknight meal and will help avoid getting take out when you’ve got a hankering for Chinese food. YUM!

And I’m sharing my Crispy Air Fried Tofu:


I’m loving the new air fryer we got for Christmas. I like getting a taste of “fried” food without actually frying it. We have been enjoying air fried tofu & potatoes. Next up – mushrooms!
