Happy New Year’s Eve Eve! I have thoroughly enjoyed my blogging break. So much reading and relaxing. Some volunteering. Oh and hiking!

I hope you are gearing up for a fun day tomorrow! We’re going to the movies during the day… I haven’t been able to stay up until midnight for many years, but maybe we’ll celebrate East Coast New Year’s haha.

Spinach Salad with Spiced Nuts & Cranberries from Green Gourmet Giraffe:

Now this is a gorgeous green bowl! I will admit to some heavy indulging throughout the month of December and my body is really starting to crave nice, green things. Salads can be boring, but this one sounds good with all of the flavours from the nuts. And the dressing sounds delicious.

Black Bean Quinoa Casserole from Courtney’s Cookbook:

I’m all about the simple meals on weeknights (lately – most every night). Although this takes awhile to bake, there is a lot of down time during the cook time which is nice. And the combination of beans & quinoa is protein packed and filling.

Snake and Spider Stew from Vegandollhouse:

This is the type of stew that is hearty & warming. Perfect winter fare. I’m enjoying seasonal foods right now and this fits in nicely. And how adorable is the little olive spider?

Maple Gingerbread Scones from Sprinkle of Vanilla Sugar:

Scones is something I did not grow up with and had not really tried until the past couple of years. I never had one before going vegan and rarely come across gluten-free ones. This recipe is a special treat that combines both elements and the infusion of maple and cinnamon sound delightful.

This week, Mary Ellen is sharing her Thai Basil Noodles:

Now that’s a bowl! Quick and easy to throw together, but satisfying with earthy mushrooms, bok choy and tofu. I may omit the spice to keep it mild, but definitely need to track down some thai basil. I’ve been getting in a bit of a kitchen rut after the excitement of the holiday meals, so this would be a great way to jazz things up!

    Sunny is one tough little athlete! My pups would be like, “hecks no we’re not hiking 12 miles…now give me a treat”.

  2. Glad to hear you had a good break – maybe I should take one too – but am still trying to catch up. Thanks for featuring my salad – I need to make it again for me – we have been having quite a few salads and my next salad I am planning is fruit salad for dessert tonight! have a relaxing new year’s eve (not sure I will make it to 12 either) and enjoy 2017 and hope you keep on with HVF as I love seeing what everyone is sharing

    1. You should most definitely take a break! I’m still trying to catch up on blog reading from November, but really needed that break.
      I made your salad last night as part of our New Year’s Eve dinner – it was so good! Especially the spiced nut, I know they will make a regular occurrence in our salads =) Happy New Year Johanna!
