Healthy Vegan Fridays #127

Happy Holiday Friday! I hope you are enjoying time with friends, family & loved ones right now and are finding lots to be thankful for. I’m thankful for dinners with friends and for my awesome family, especially my furry little beast as our anniversary together was just a few days ago.

This is her “Why is your blogging crap on MY chair?” face haha

Never heard of Healthy Vegan Fridays before? It’s an amazing weekly linkup for bloggers to share their delicious and healthy vegan food. This linkup is not restricted to recipes though – feel free to share your posts on exercise & fitness, plant-based health & wellness,  and/or vegan travel, restaurant and cookbook reviews.

Don’t have a blog? Don’t worry! You can come and see what others have shared and find some tasty food to try!

Farro, Mushroom, Cranberry & Walnut Stuffed Acorn Squash from Running in a Skirt:

How pretty is this?? This is a gorgeous main meal, ready to make any table and everyone around it very happy. My favourite part? It’s easily made gluten free for subbing the farro for quinoa or rice.

Gluten-Free Dark Chocolate Brownie from Courtney’s Cookbook:

Speaking of gluten free!! YES! I will admit that I get SUPER excited when people make gluten free baked goods and post them on their blogs as I am not great at baking unless I follow a good recipe. You bet I’ll be making these sometime soon =) Chocolatey goodness!

Butternut Mango Orange Layer Cake from Allotment 2 Kitchen:

Isn’t this cake gorgeous? Making this cake to for your next dinner party will have everyone asking for more. I don’t tend to use mango in recipes, I’m not sure why, it sounds fabulous in this cake.

Roasted Brussels Sprout Neopolitan Pizza from A Whisk & Two Wands:

Ah pizza, my old friend. Sarah always thinks of such creative and new ways to enjoy pizza. Mine is always so boring, but I’ve been able to up it’s A game recently following her recipes =)

Mary Ellen is sharing her Gingerbread Hot Chocolate:

Who wouldn’t want a mug of this deliciousness? I’ve always been a fan of hot  chocolate, but haven’t found many places that serve it. Silly me, I could just be making my own with a few simple ingredients =) This will be making it’s appearance in my mug very shortly.

And I’m sharing my French Toast:

We’d love it if you link up and bring some friends to the party! We’ll be pinning and sharing your tasty treats on social media!

  3. So many delicious creations, that Gingerbread Hot Chocolate is going to be a must this week.

LOVE my brussels, thank you for including my pizza and I’m so happy to know I’ve inspired you to up your A game with pizza. Haha! I just made that one again over the weekend. I’d have the hubby bring you one when he’s back in CA next week but not sure it would be good cold. I’ve never tried it since there is never any left.

Happy Vegan Friday, sorry I didn’t link up this week I didn’t post Friday as I took “time off” as we were out of town entertaining friends. I’ll be linking up again this week.
