Healthy Vegan Fridays #122

Happy Friday folks! Baby – it’s the freakin’ weekend! I’m super psyched as I’m having a few girls from my veg girls meet up group over for a Halloween Party. Woot woot! I LOVE Halloween – it’s my favourite holiday. Do you have any exciting weekend plans?

October Theme: Halloween Inspired Recipes

We are collecting your Halloween themed recipes TODAY and will share our favorites next Friday, October 28th. I’m so excited to see what spooky treats you share with us today. Let’s get this party started!

Never heard of Healthy Vegan Fridays before? It’s an amazing weekly linkup for bloggers to share their delicious and healthy vegan food. This linkup is not restricted to recipes though – feel free to share your posts on exercise & fitness, plant-based health & wellness,  and/or vegan travel, restaurant and cookbook reviews.

Don’t have a blog? Don’t worry! You can come and see what others have shared and find some tasty food to try!

Here are our favourite recipes from last week!

Apple Cinnamon and Toasted Coconut Protein Oatmeal from And a Dash of Cinnamon:

This warm, apple cinnamon-y oatmeal is the perfect breakfast food as the mornings cool off. The extra boost of protein will help with a good energy burst to get through the day.

Baked Butternut Squash with Smoky Mushrooms from Beautifully Bohemian:

Ok, I like baked squash as much as the next girl, but the smoky mushrooms? That totally adds a new level to this dish. I think this could actually be a main… my hubby and I would totally just polish this entire dish off in one sitting haha 😉

Thai BBQ Cauliflower from Zsu’s Vegan Pantry:

I’m always surprised at what people can do with cauliflower when I usually just cook it in curry or roast it with plain, boring olive oil. Zsu really kicks it up a notch with this crispy, flavourful dish. I really need to get myself an air fryer!

Banana Pumpkin Pancakes from Strength & Sunshine:

I still haven’t mastered gluten-free pancakes. Maybe these will be the ones that I finally make well. These would be the perfect way to start the day.

Mary Ellen is sharing her Vampire Bite Cupcakes:

How awesome are these?? This is a fantastic nod to all of our beloved vampire movies and books (especially Twilight of course!). They are cute AND scary =)

I’m sharing my Chocolate Apple Pops:

We’d love it if you link up and bring some friends to the party! We’ll be pinning and sharing your tasty treats on social media!

  1. Well most of my halloween ideas are not fully formed (ie might never happen) but I did give a slight halloween twist to my bliss balls I made today so am excited I can share them – can’t wait to see what everyone else comes up with – and now off to check out that perfect combo of pumpkin and smoky mushrooms!

    1. You are actually the only one that had anything close to a Halloween recipe! I like your little eyeballs on them, that was a very cute touch. And they sound great! Thanks Johanna!

  2. Ah, I missed the call for Halloween-themed foods! Though I’m lacking creativity there in anyway as Halloween itself is hardly a big deal over here at all.
Happy Friday and enjoy the party with your friends!

  3. Your apple pops look soooooo good! I can’t wait to try them!

Your girls Halloween party sounds awesome! I wish I was close to you so I could (hopefully) get an invite lol!

As you know, I’m going to Disney! Can’t wait!

    1. I still didn’t try one haha. I was so busy making sure everyone else got food, I didn’t have a whole lot myself ;p That’s how parties work I suppose. I’ll post pictures of the party – you should fly out for next years!!!! ;p
Can’t wait to hear about Disney!
