Healthy Vegan Fridays #121

Happy Friday!! Do you have any exciting plans this weekend? My weekend is completely booked with a course I’m taking. The class itself isn’t super exciting… but the reason for the class is! Stay tuned for more info 😉

October Theme: Halloween Inspired Recipes

Show us spooktacular culinary creations! We’ll collect your posts on October 21st and share our favorites on the 28th. Can’t wait to see what fall treats you will share!

Never heard of Healthy Vegan Fridays before? It’s an amazing weekly linkup for bloggers to share their delicious and healthy vegan food. This linkup is not restricted to recipes though – feel free to share your posts on exercise & fitness, plant-based health & wellness,  and/or vegan travel, restaurant and cookbook reviews.

Don’t have a blog? Don’t worry! You can come and see what others have shared and find some tasty food to try!

Here are our favourite recipes from last week!

Narwhal Doughnuts from Vegan Dollhouse:

I can’t even handle how cute these doughnuts are! I just finished reading 20,000 Leagues Under the Sea so I have narwhals on the brain, I hadn’t heard of them before this and was googling every little creature the book mentioned. These are just too pretty to eat. Almost.

4-Ingredient Roasted Sweet Potatoes from Running in a Skirt:

Check out these golden cubes of goodness. Sweet potatoes are just plain awesome in my books, I use them as a side frequently, but these are seasoned and taken up a notch with some dried thyme and could be a meal all on their own.

Tamarind, Edamame, Soy and Green Beans from Allotment 2 Kitchen:

Ok… I will admit I have been putting off buying tamarind. I keep seeing it in recipes, but just omit it. But this recipe has it as a central ingredient and I’m so intrigued by the flavour as it sounds simply delicious, it’s on my list to buy to try this out next week.

Better Than Chipotle Vegan Burrito Bowl from Fueled by Carrots:

Would you believe I just tried Chipotle for the first time just a few short weeks ago? I had low expectations, but it’s actually not bad. I much prefer the idea of making my own burrito bowl anyway and this recipe sounds perfect!

Mary Ellen is sharing her Pumpkin Pasta:

Such a gorgeous plate! I sadly am sensitive to pumpkin, but I just may try this with puréed sweet potato or butternut squash. I know all of you pumpkin lovers will enjoy it though =)

I’m sharing my Overnight Apple Pie Buckwheat:

We’d love it if you link up and bring some friends to the party! We’ll be pinning and sharing your tasty treats on social media!

  1. Thank you so much for featuring my recipe, really appreciated I am curious about your class, look forward to hearing about it. I am not the most organised at the moment with home cooking and Halloween ideas, so don’t know if I will participate but will try. Have a good weekend and yeph those doughnuts are pretty awesome and the Pumpkin Pasta.

    1. I’m just realizing I need to get my act together to make my own Halloween recipe haha ;p If you don’t have time this week, you can still always share your halloween recipes with us when you have time =)

  2. Those doughnuts are adorable!
I am looking forward to hearing about your class!
I am also attending many lectures this weekend, I am going to the Animal Activist Forum.

  3. I had my baby shower yesterday and had some great vegan food (and without having to cook! That was awesome!) But now I have today to do all the errands and boring stuff (like going to the doctors and paying bills!) XD

Those narwhal donuts are pretty stinkin cute! I wish I had to patience to decorate al my food. XD

    1. Happy Baby Shower! I hope it went well, I bet it was great =) Well, even though the errands are boring, hopefully you’ll get some down time too.

I know, right?! Even when I try to make my food that cute, I totally fail horribly ;p
