It’s Friday! Woot woot! Are you gearing up for any exciting weekend plans? My half marathon is next weekend so this is my last training weekend… which means I don’t have much else planned. I am going to check out a healthy treat eating meetup tomorrow though – that should be fun =)

Apple Pie Overnight Oats from Running in a Skirt:

Anyone who knows me will know that overnight oats is my absolute favourite breakfast. I will admit that I tend to lean towards the chocolate almond butter variety, it’ll be nice to try something different.

Broccoli Rabe  & Sun-Dried Tomato Spaghetti Squash Bake from The Fit Foodie Mama:

I’m always on the look out for new, fun ways to enjoy spaghetti squash. The salty sun dried tomatoes with the slightly bitter greens, would make a fantastic flavour combo.

Late Summer Burger Salad from Zsu’s Vegan Pantry:

Would you just look at this cute, little burgers? They kind of remind me of cute little falafels, but with different flavours. I like the ginger and pea in these little patties.

Quick Roasted Tomato Toast from The Taste Space:

I’ve been enjoying the little cherry tomatoes in salad, but roasting them really brings out a deeper and more wonderful flavour. This is a perfect way to enjoy roasted garlic without as much time and effort too.

Ah! I grew up on Kraft Dinner (that’s what we call mac n’ cheese in Canada) and still get cravings for it. I like the homemade cashew cheese in this. YUM!
