Healthy Vegan Fridays #117

Happy FriYAY! I hope you are gearing up for a lovely weekend! I’m looking forward to spending the day tomorrow helping a friend opening her home to the community as she rescues chickens and wants to educate others how to operate your own little backyard rescue. She is seriously awesome. I’m also training for a half marathon and this weekend is 2 weeks out so I will be doing a lot of running. And a lot of eating carbs. At least it balances out 😉

Strawberry Passionfruit Muffins from Green Gourmet Giraffe:


As we’re heading into fall, Johanna’s readying up for summer. I’ll be aiming to make these muffins as a way to stave off the cooler weather and keep the warm thoughts and delicious in season fruit alive.

Pumpkin Spice Toasted Walnuts from Courtney’s Cookbook:


Though I’m not a fan of pumpkin, I think the spice is good in some things. These nuts would definitely be a good way to enjoy it. They will definitely be made into my snack rotation – especially as a good post-workout snack.

Banana Oatmeal Chocolate Chip Cookies from Running in a Skirt:


I’m well into Mary Ellen’s Healthy Eating Challenge and I’ve been managing quite well, but still find I have a sweet tooth that needs a bit of indulging. It’s nice to come across recipes like this that will help my cravings without sacrificing the idea of a healthy snack. Yum!

Minestrone Waffles from Vegan Dollhouse:


I’ve never really been much for waffles. My breakfast food typically gravitates to smoothies & grain bowls. BUT these loaded waffles would be super filling and would actually make a good lunch or supper. And they are completely adorable.

Hello beautiful bowl of goodness! She totally gave oatmeal a makeover. And I’m totally loving her tip of baking it in the toaster oven instead of having to turn the oven on.

      1. Yep, I’ve never had a problem before and a link to your blog appears on all my posts whether they are vegan or not. (obvi I only post the vegan ones here lol). It just claims there is no backlink, and therefore won’t add it. I checked the box to submit anyway after approval, but it’s still not showing up on your link up.

        1. I had the same issue. I tried to link to the HHF base page (with all the info) and it told me that I had no link in my post. I finally added your home page and that worked. I haven’t had that be an issue before, either, so it was strange.

    Your friend’s chicken rescue sounds wonderful! Such a great cause. Chickens are so cute and have distinct personalities if you get to know them. I used to sponsor a chicken named Ophelia at Woodstock Farm Sanctuary. I went to visit her and she let me pet her for a while. She’s passed on now but I loved that little chicken.

      That’s so strange. We changed it up last week and it seemed fine, I tried to make sure I set it up the same way.
      I’m sorry there was so much trouble with it. I’m not sure why it worked so easily last week and not this week. I appreciate your patience.
