Healthy Vegan Fridays #114

Hello my loves! I hope you are having a glorious week and gearing up for an even better weekend! Yes, despite not working, I still look forward to the weekend to spend more time with friends and my hubby ❤️. I am looking forward to a little downtime this weekend after my hiking adventures last weekend. Can anyone guess where this is?? I will have a post with lots of pictures up for you next week =D

Healthy Eating ChallengeI also wanted to share with you a little challenge Mary Ellen is doing for September. We’ll be eating healthy for the month and thought others might be interested too. It’s not a diet and is not about restricting calories, it’s more of a way to make sure we focus on veggie-based whole foods. You can check out more about it here.

Now, down to business!

Don’t forget to sign up for the reminder email so you can link up each and every Friday (scroll on down to the bottom).

Never heard of Healthy Vegan Fridays before? It’s an amazing weekly linkup for bloggers to share their delicious and healthy vegan food. This linkup is not restricted to recipes though – feel free to share your posts on exercise & fitness, plant-based health & wellness,  and/or vegan travel, restaurant and cookbook reviews.

Don’t have a blog? Don’t worry! You can come and see what others have shared and find some tasty food to try!

Let’s check out some of last week’s recipes!

Pesto and Poppyseed Scones from Green Gourmet Giraffe:

Can you just picture yourself at high tea enjoying some wonderful herbal refreshments and nibbling on these savoury bites? I sure as heck can! I’m practically drooling as I type this. The only thing that could make this more enjoyable is to enjoy them with the lovely Johanna herself =)

Black Forest Cake from Masala Vegan:

It’s not to late to celebrate my birthday again, is it? This sounds like a perfect treat to enjoy over the weekend – perfect chocolate-cherry awesomeness.

Gazpacho Andaluz from Delicioso, Another Name for Delicious:

It’s tomato season!! I’ve been cooking my tomatoes up, it’s time to switch it up to some “no-cook” soup to cool off during the hot days. The cucumber adds a nice, refreshing flavour. And adding bread is a creative way to get a nice texture.

Party Sized Vegan Cauliflower Salad Sandwiches from Beautifully Bohemian:

There sandwiches are completely adorable! And perfect for pint-sized kiddos for a great finger food. Or adults 😉 Way to get in some nutrition with this fun party food!

Mary Ellen is sharing her Green Curry with Tofu:

After my “camping” trip from last weekend sustaining off of nothing but fruit & granola, I am totally craving tofu & greens! This is totally making it into my meal plan this weekend =)

This week, I’m sharing my Tofu Dragon Bowl:

We’d love it if you link up and bring some friends to the party! We’ll be pinning and sharing your tasty treats on social media!

  4. I can’t believe it’s Sunday already!! My mom is at our house with my stepdad, so it’s pretty crazy right now.
