Healthy Vegan Fridays #113

Baby, it’s the freakin’ weekend! I’m looking forward to the weekend because I’m headed to Yosemite for the first time ever. It’s been on my to-do list since moving to California 4 years ago. It sounds like any of the restaurants in the park aren’t super vegan friendly. So I’m packing a ton of snacks 😉 I’m also going to make granola and some runner balls.

Easy Southern Sweet Potato Salad from Veggie Quest:


How have I never thought of making sweet potato with delicious sweet potatoes? Fresh dill really adds a wonderful summer flavour and the pickles give it a bit of a sour kick. Great way to re-vamp an old favourite.

Pizza Crackers from Vegan Dollhouse:


These crackers are completely adorable. AND I love all things pizza flavoured =D I really like how these use some great, seasonal produce too. I can’t wait to try making these in different shapes.

Strawberry Curry from Allotment 2 Kitchen:


I’ve never tried a fruit curry – always savoury. Sounds like a great way to shake things up. Shaheen even uses fresh strawberries from her own backyard. Talk about local and seasonal eats 😉

Savoury Pesto Zucchini Muffins from One Raw Bite:


Speaking of always having savoury curry – I also always have sweet muffins. I need to switch it up! There is an abundance of zucchini at the Farmer’s Market right now, I’m looking forward to trying a new recipe with them instead of my standard stir fry.

What a perfect dish to enjoy during the end of August. I like the touch of balsamic vinegar and the lime juice. Yum.

  2. Have a wonderful time Kimmy! Yosemite is a place on my to do list too! I’m looking forward to read more about it when you come back. Andrew and I are going to a soccer (my british husband would correct me and say football…lol) match tonight: Montreal Impact vs. Chicago Fire! Should be fun!

Okay, I might be being naughty here, but i have added two recipes this week to the linky, if i am only permitted one, please let me know and I won’t do it again (delete it) :0 ) I hope you have a good time in Yosemite. I had the opportunity to go there many years ago when I visited my best friend Leah who lives in Oakland many many years ago, but I freaked out as I wasn’t sure I was up for going camping never having done it then, but of course later regretted it. Have fun.

    1. Shaheen – we do not have a limit on recipes! No problem! It’s the good kind of naughty I think haha ;p
      I actually had a chance to go to Yosemite a couple of years ago, but was also nervous, so I backed out and didn’t go. To be honest, I am a little freaked out about the outdoorsy experience. We are staying at one of the on-site “hotels” though at least. My friend tried talking me into a yurt and I not so politely declined ;p
