Healthy Vegan Fridays #110

Happy happy Friday! I’m looking at a weekend filled with bootcamp, brunch & birthday celebrations. And some much needed downtime after returning home from visiting family in Canada. I miss them piles & piles already, but looking forward to an upcoming visit with my mom. Do you have any fun weekend plans?

One Bowl Healthy Vegan Oatmeal Chocolate Chip Cookies from Let’s Get Up & Live:


Ms. Polkadot sure is making gluten-free easy with these decadently delicious cookies! With just a few ingredients, these come together quickly and can smash a sweet tooth craving in no time! Yum-my!

Braised Tofu and Eggplant from Green Gourmet Giraffe:

I really hate to admit I’m not a fan of eggplant. I hear it could be the way I try to prepare it though. I think with the eggplant cooked as thoroughly as it is, I could enjoy this. The fried tofu cubes and garlic & ginger would really be lovely and disguise the eggplant-y flavour. I also think that I would eat just about anything Johanna made =)

Neapolitan Protein Bars from GiGi Eats Celebrities:


I love these pretty bars! They give me fond memories of the ice cream flavour from when I was a kid. These sound way better though. I’m alway on the look out for protein-packed snacks I can take with me and these are definitely it!

One Pot Mac and Cheese from Strength and Sunshine:


The world needs more one pot recipes! Especially ones that are slightly healthier than cashew or coconut based “cheeses”. I love the idea of using carrot and nutritional yeast to make a sauce for these cutie chickpea noodles. Brownie (or should I say cheesy???) points for being so allergy-friendly!

Aww thanks for your kind words about my eggplant dish – I am not so huge on eggplant but occasionally I just love it to bits and this was a really good way to eat it, even though I want to try the tofu different ways. Your weekend sounds busy – hope you enjoyed it (well it is end of our weekend now)

    1. I tend to enjoy it when others make it for me, not so much when I make it for myself. So I will have to recruit a friend to make your eggplant dish for me haha 😉
      My weekend was busy, but I got some nice downtime today – I hope you had a lovely weekend =)
