Gluten-Free Chocolate Brownie Pie from The Lazy Vegan Baker:
You know what my favourite thing about this recipe is (despite the obvious chocolate part haha), I have every single one of the ingredients in my pantry. I don’t have to go out and buy any weird, expensive ingredients like I sometimes do with gluten-free baking. And well, chocolate. Obvi.

Speaking of chocolate… One of the funny things in this post is that Lauren mentions if you don’t like hemp seeds, you may not like these chocolatey bars of goodness. Are there people who don’t like hemp seeds??? I have a hard time wrapping my head around that. And well, anything covered in chocolate, right?!
Arroz con coco and lentils from ModVegan:
One of my other loves in life (besides chocolate) is lentils and rice. It’s such an awesome combo. Grains & protein – fuel for energy. And I love the suggestion of making fried plantains with it. This will be on my meal plan in the near future =)
Chocolate Peanut Butter Mousse from Bite-Sized Thoughts:
More chocolate! This gives me fond memories of the chocolate mousse my mom used to make me while I was growing up. It was from a package and I would eat so much of it! I like the idea of making my own vegan-version, especially with the protein boost from the silken tofu.
This week, Mary Ellen is sharing her Spicy Sesame Noodles. I can’t wait to try them out… although I will shamelessly admit that I will be making them sans spice 😉
