Healthy Vegan Fridays #108

Mary Ellen and I are excited to announce we have a new feature for Healthy Vegan Fridays this week. Mary Ellen has created an email list and will be sending out emails to everyone who has submitted recipes to HVF in the past 2 months to let them know when our linky is live so you don’t forget! Happy Friday! By the time you read this, I will be in Ontario, Canada visiting family. It’s my niece’s birthday today and I’m so excited to be home celebrating with her. I hope you have an exciting weekend planned!

Gluten-Free Chocolate Brownie Pie from The Lazy Vegan Baker:

You know what my favourite thing about this recipe is (despite the obvious chocolate part haha), I have every single one of the ingredients in my pantry. I don’t have to go out and buy any weird, expensive ingredients like I sometimes do with gluten-free baking. And well, chocolate. Obvi.

Speaking of chocolate… One of the funny things in this post is that Lauren mentions if you don’t like hemp seeds, you may not like these chocolatey bars of goodness. Are there people who don’t like hemp seeds??? I have a hard time wrapping my head around that. And well, anything covered in chocolate, right?!

One of my other loves in life (besides chocolate) is lentils and rice. It’s such an awesome combo. Grains & protein – fuel for energy. And I love the suggestion of making fried plantains with it. This will be on my meal plan in the near future =)

Chocolate Peanut Butter Mousse from Bite-Sized Thoughts:

More chocolate! This gives me fond memories of the chocolate mousse my mom used to make me while I was growing up. It was from a package and I would eat so much of it! I like the idea of making my own vegan-version, especially with the protein boost from the silken tofu.

This week, Mary Ellen is sharing her Spicy Sesame Noodles. I can’t wait to try them out… although I will shamelessly admit that I will be making them sans spice 😉

    1. Yay! Glad you are giving positive feedback about the email =) I’m totally the same way with linkies, if I don’t get an email reminder, it doesn’t normally happen.
      I think I forget what day of the week it is since I don’t work.
