I LOVE date balls. I like thinking of different combinations and ways to make them – but this is brand new to me. Tropically deliciousness! I also love the creative use of quinoa flakes.

Pizza Flatbread for One from Courtney’s Cookbook:


Pizza is like my all time favourite food. I love this idea of making a bread out of it. Easy to make vegan by swapping in vegan mozza shreds. And I think I will try and make this gluten-free and see how it goes. Yum.

Loaded BBQ Potato from Fueled by Carrots:


Look at this bad boy! This is a meal in itself. The no-cheese sauce sounds delicious. No room for boring old baked potatoes!

Chocolate Chip Chocolate Avocado Ice Cream from Sandi’s Allergy Free Recipes:


I scream! You scream. We all scream for chocolate avocado ice cream!!!! We’ve been experiencing some hot temperatures this week and this is exactly what I need to hit the spot.

This week, Mary Ellen is sharing her Buffalo Quinoa Balls with Ranch Dipping Sauce:


Holy moly these look good! I hate to admit that I’m not a hot sauce lover (or even liker), but I would totally eat these up if Mary Ellen made them for me. As a matter of fact, I may try making them with my homemade mild bbq sauce.

  2. Hi Kimmy, all your picks this week look so good! And your cupcakes are off the charts—love love love that they are gluten free, yay!!!! On my to-bake list. :-) Also the Fueled by Carrots baked potato looks amazing, and I have that exact same plate. Made me smile!

    1. Haha… I know they aren’t healthy. Buuuuut a girl needs a treat once in awhile. They are gluten-free and they actually rise and everything. I couldn’t believe how they turned out.
      And yes – the potatoes are totally on my to-make list. Thanks Lee!! Have a super weekend =)

    1. Right?! It’s on my to-make list for sure. I even had some cherries in the fridge past their prime so I took a good 45 minutes to de-stem them and remove the pits so I could freeze them to make this glorious sounding ice cream!
