Happy Friday my loves! I have an EXCITING announcement this week. After managing Healthy Vegan Fridays solo, I have a wonderful new co-hostess. Mary Ellen from VNutrition will be sharing the HVF love with me each and every week from now on =D She has supported HVF for over a year now and has consistently contributed awesome plant-based recipes and I am so very happy she is keen on helping out with this growing blog hop. Go on and give her a big welcome!

I admit to never having had Lo Mein (small town gal with only pizza take away), but I’m totally digging this quick & easy dinner. Perfect to throw together on a busy weeknight. Yum.

How adorable are these little cups?! I am totally going to make them for my next party. I have been accused of making un-cute food in the past – this will help my rep at my vegan meetup get togethers 😉

Roasted Ranch Chickpeas from Courtney’s Cookbook:

I’ve tried falafel roasted chickpeas, salt & vinegar & bbq – but these sound like the best flavour yet! Another quick recipe – perfect for snacking for those mid-day munchies.

  2. Welcome Mary Ellen and thanks Kimmy for featuring the noodles – I laughed at your pizza place in your small town – ours was the local fish and chip shop in our small Aussie country town – and it burnt down one night :-) (Hmm there was a fire but maybe it did not completely burn down).
