Healthy Vegan Fridays #102

Happy Friday my loves! I have an EXCITING announcement this week. After managing Healthy Vegan Fridays solo, I have a wonderful new co-hostess. Mary Ellen from VNutrition will be sharing the HVF love with me each and every week from now on =D She has supported HVF for over a year now and has consistently contributed awesome plant-based recipes and I am so very happy she is keen on helping out with this growing blog hop. Go on and give her a big welcome!

Never heard of Healthy Vegan Fridays before? It’s an amazing weekly linkup for bloggers to share their delicious and healthy vegan food. This linkup is not restricted to recipes though – feel free to share your posts on exercise & fitness, plant-based health & wellness,  and/or vegan travel, restaurant and cookbook reviews.

Don’t have a blog? Don’t worry! You can come and see what others have shared and find some tasty food to try!

Let’s check out some of last week’s awesome sauce recipes!

Lo Mein – Easy Veggie Noodles from Green Gourmet Giraffe:

lo mein noodles (1)

I admit to never having had Lo Mein (small town gal with only pizza take away), but I’m totally digging this quick & easy dinner. Perfect to throw together on a busy weeknight. Yum.

Easy Party Veggie Cups from Veggie Quest:

How adorable are these little cups?! I am totally going to make them for my next party. I have been accused of making un-cute food in the past – this will help my rep at my vegan meetup get togethers 😉

Roasted Ranch Chickpeas from Courtney’s Cookbook:

I’ve tried falafel roasted chickpeas, salt & vinegar & bbq – but these sound like the best flavour yet! Another quick recipe – perfect for snacking for those mid-day munchies.

This week I’m sharing my Cold Almond Butter Noodle Bowl:

And Mary Ellen is sharing her Quick Curry Noodles with Toasted Cashews:

We’d love it if you link up and bring some friends to the party! We’ll be pinning and sharing your tasty treats on social media!

Join Kimmy (Rock My Vegan Socks) & Mary Ellen (VNutrition) for HVF!

  1. Thanks so much for the warm welcome Kimmy! So excited to help share the delicious vegan food love and to see what everyone brings this week.

Kimmy and I will be pinning and sharing all of your recipes! If you’re on social media, remember to hastag #HealthyVeganFridays!

  2. Welcome Mary Ellen and thanks Kimmy for featuring the noodles – I laughed at your pizza place in your small town – ours was the local fish and chip shop in our small Aussie country town – and it burnt down one night :-) (Hmm there was a fire but maybe it did not completely burn down).

  3. Oh my gosh, that is such exciting news! Mary, you will be great a co-hostess! I’ll definitely start using the #healthyveganfridays hashtag too <3 such a great idea! Happy weekend 😀

  4. Thanks for the feature, Kimmy and Mary Ellen! And Mary Ellen, congrats on your new co-host(ess) position! Look forward to seeing HVF on Rock My Vegan Socks AND VNutrition. :-) Will start using the hashtag!
