Happy Friday my lovelies! If you are in the States (though it seems many of my blogging buddies are on a different continent!), you may just be gearing up for a much needed long weekend. Woohoo! What better way to start it off then with Healthy Vegan Fridays?

Savory Rice Risotto from Delicioso:

I always thought risotto was a tad boring. It’s just rice really. I really love the idea of this veggie-filled version infused with spices. There are even some split peas for good measure (and protein!).

And the creative pasta award goes to Shaheen! I admit to making the same pasta week in and week out. This definitely inspires me to move out of my comfort zone and try some different flavours. Awesome fusion dish =)

Oil Free Almond Pear Muffins from Veganopolous:


What a clever use of using up some things that needed to be used up. I love making recipes when I’m cleaning out the fridge – it forces my creativity. These sound like being wrapped in a warm blanket. I love the use of pear purée in place of oil.

I have a long weekend, so its gardening – WEEDING time to get my hands dirty.   3. All my US friends are posting about a long weekend, and I am tragically on my working weekend. So Sunday is my only day off. Oh well, next week will be my regular fortnightly long weekend of four days off. So I can’t really complain… but I will still whinge a little. 😉

    1. You can most definitely whine! It doesn’t every particularly feel like a long weekend for me since I don’t work. Sounds much nicer than it actually is. I hope you had a nice day off and are excited about your long weekend this weekend =)
