I always thought risotto was a tad boring. It’s just rice really. I really love the idea of this veggie-filled version infused with spices. There are even some split peas for good measure (and protein!).

And the creative pasta award goes to Shaheen! I admit to making the same pasta week in and week out. This definitely inspires me to move out of my comfort zone and try some different flavours. Awesome fusion dish =)
Oil Free Almond Pear Muffins from Veganopolous:
What a clever use of using up some things that needed to be used up. I love making recipes when I’m cleaning out the fridge – it forces my creativity. These sound like being wrapped in a warm blanket. I love the use of pear purée in place of oil.
