Healthy Vegan Fridays #100

Woot!!!!! It’s celebration time! This marks the 100th HVF post. I started contributing to this linky party when the lovely Carrie was hosting it. I was passed the HVF torch and started co-hosting with some lovely bloggers who decided to step down. Ms. Robin co-hosted for a bit too, but I’ve been hosting solo for awhile now. There have been times when I have thought of throwing in the towel. People weren’t really participating and I felt it was a lot of work. BUT it is really starting to gain in popularity. And I have all of you to thank for that. Let’s celebrate! Let’s keep HVF going STRONG!

Only Kale Can Save Us Now Salad from Green Gourmet Giraffe:

Summer is here and I am craving green things like they are going out of style! And how cute is the name of this salad?? This simple green goddess comes together with just a few ingredients and a few moments of your time. Simple, yet delicious!

Saffron Smoked Mashed Potatoes from Katering for Veggies:

I used to love mashed potatoes as a child. As a grown up, I’ve become disenchanted with them. There isn’t anything particularly special about them. Unless you add some absolutely lovely things like savoury saffron and that almost bbq flavour from the liquid smoke. These are most definitely grown up mashed potatoes!

Potato Salad with Parsley from Inhabited Kitchen:

potatosaladSpeaking of potatoes. It is potluck season and check this bad boy out! I especially like the tip she gives using vinegar to soak the cooked potatoes to add a little more flava-flave to the potatoes. And who needs mayo?? Not these potatoes! Nicely flavoured with good ole apple cider vinegar & fresh parsley is a perfect potato combo.
